"Why are they so expensive?" Because of shows like this. Used to be pennies a pound because it's OFFAL. Same with oxtail, skirt steak and many other cuts and bits that used to be staples of the poor. Now it's all as expensive is prime cuts. I used to make an oxtail and bean cassoulet, but now it's as expensive to make as beef bourguignon. Ridiculous, but hey as long as they are making money that's the way it goes.
