I got a beautiful, massive prime tomahawk ribeye from my local butcher Avon Prime Meats. Figured I’d smoke the steak before the sear, then decided that I would sear the ribeye in the firebox instead of getting another grill fired up… follow along for this epic steak cook!
Takeaways:
1. This steak was essentially a 1 bone prime rib roast. It weighed in at 3.8 lbs and 3.75 inches thick. It took a while on the smoker, almost 90 minutes. The smoke bath at 250 led to a great smoke flavor and a very distinct smoke ring.
2. Next time, for the sear, I’m going to replicate everything I did in this cook but not use a cast iron. I’ll put a grate directly into the smoker over the coals. The cast iron just didn’t get hot enough and the sear wasn’t optimal. I like a dark char/crust on my steak and I didn’t quite get there with this one.
3. Great quality steak cooked with a live fire from start to finish is tough to beat. This was an incredible meal!
