Even though I grew up using charcoal I now find myself wondering why dad would place the charcoal on one side of the grill and since he passed away I couldn’t ask but finding your channel had shown me why dad would grill the way he did. You answered questions I knew about but not the reason why he did it the way he did. Thanks
Your friends and family are going to wanna come over to eat more often, haha. When I first started grilling I would buy carne asada and marinated chicken from different local Latino meat markets so I can compare the taste. Over time I bought less from those markets and started prepping my own meats. Good times!
Thank u so much for this! Never had a dad to show me how to do this or anyone in general so being a single mom Im learning thru RU-vid for my kid! Awesome info
You are so welcome! My dad didn't know how to grill so I had to learn by making my own mistakes. RU-vid is awesome, I've learned a lot from other youtubers. That's actually why I created my channel, I wanted to give back to the community that helped me out =)
That's awesome! 2 zone is my go to method for just about everything. I've been grilling for a few years and I am still a student of the craft myself. You just reminded me that I need to do my grilled chicken video =)
That "2 zone" has never worked for me....I get better results with the coals spreaded around equally.....the tip to not letting your food burn is to keep flipping it every few minutes depending on the type of meat that you're cooking....my grandmother taught me that.
I recently bought a Weber charcoal grill for myself, same one as yours actually. I would have never thought about the two zone cooking or even where the vent on the lid should go for certain cooks. This was very helpful and easy to understand. Takes a little bit of the anxiety of doing it for the first time very soon. Thank you!!
Yeah, there some details that help improve the grilling experience. I love youtube because you can learn so much from others. I tend to check videos when i'm doing something for the first time. For example, I recently had to replace my radiator on my car and watching a youtube video gave me the confidence to do it myself. Now on to the next car repair, hehe.
🙏THANK YOU Sir!! Young people today are lost without people like you to help us. My daddy died and he didn’t get a chance to show me how to do this before he passed away. At least now I won’t blow myself up. Daddy always had the answers to my questions and I could always count on him. RIP Daddy.🙏😭😢 Thank you for helping us daddyless girls out here!! 🤗💞🤗
I agree, parents in this generation are more wealth-centered and forget that its important to teach their kids skills and knowledge they know in order to help their kids thrive. I have a 7 year old and I work hard to teach him what I know. I have a 1year old daughter and I plan to do the same with her. I hope your dad inspired you to educate yourself as much as possible, sounds like he was an awesome dad. RIP to your daddy.
Machii Rose - 🙏Thank you kindly. I miss daddy so much. Even though I’m a girl, he let me be as tough as I wanted to be and as much of a girly girl as I wanted to be too. He tried to teach me everything he knew.💝
Haha! Shiny and beautiful! Congrats on the new grill. That's how I feel when I first unbox a new gadget or tool. I baby my stuff and then I let someone else borrow it and they mistreat my stuff, haha.
Say bro. I used some of these tips yesterday with great success. Instant grill master! My family ate until they were stuffed on ribeye, potatoes and various other delicacies. I hit the steaks perfectly by trusting the training. Thanks for providing simple, useful information.
Sounds like you're going to be the go-to person in the family when they need a grillmaster! People will be coming to you for tips and recommendations, get ready!
Great video! I've been cooking on Webber kettles for over 20 yrs. While experience is always the best teacher, following these simple tips will put one far ahead of other beginner grillers. I learned most of this from trial and error and it took years to master. And you are absolutely right. For standard grilling, the Webber kettle is the go to because it is so versitile. Keep up the great work!
I am comfortable learning from my mistakes and had to go through a lot of errors to be able to to get to that point where I am ready to teach someone else. Good times!
You can season your hot grill with an onion. Cut the onion in half and rub that grill down nice. Then you can slice off the burnt side of the onion and then you can grill the onion up along side whatever you’re barbecuing. Waste not, want not.
That's a good point about cutting off the burnt side of the onion and consuming the rest. I've had people mention they dip the onion in oil to help clean the grill too. I haven't tried it, but I will one day.
@@ChavezDIY, I approved that advice as well. It works. And after I clean the grates. I let the onions fall in the coals🙌🏾💯. It give that onion smoke flavor. For real.
Thanks for sharing! My wife bought one of these grills about a month ago at a yard sale. The people were moving and selling everything. She bought it for $10.00 and it was in very good condition. She brought it home and we cleaned it up. We plan on cooking on it this weekend. :)
Super cool, you guys scored a really good deal on that grill. I paid $150 for the one I have. It is a reasonable price. I've seen people pay several hundred for those "green egg" kamado style smokers. I can't justify a purchase like that for myself. Next I want to get blackstone griddle.
Man you have it for 4 years. You take care of your grill, it looks new. Thank you for the great video. I am starting to grill in 2023, never grilled before in my life. Everyone wish me luck.
4 years at the time of the video (2017-2018). I didn't even keep it covered but I did keep it in a partly shaded area. By now it is developing some rust in some areas but it's still working good. Thanks! 👍
I just found this video today. I'm currently renting a place that came with a tiny little charcoal grill outside but had no intention of using it. Now that summer is here, i hate using my oven because it heats up my home so much. Im now motivated to try using that little grill and this video just gave me the courage. Thank you!
I hope you made good use of that grill in that rental. My mother in law lives with us and she loves to cook no matter how hot it is, haha. The worst part is that our range hood vents right into the attic instead of out of the roof because the vent tube was poorly installed.
I would have never thought of that strategic half charcoal and air vent placement. Very clever. Just bought my grill yesterday and I'm definitely going to try that strategy. Thank you so much for all the tips!! *Subscribed*
I learned the two zone method from watching videos from the BBQ Pit Boys youtube channel. Welcome to the charcoal grilling club! Glad to see people are still interested in charcoal grilling.
One tip as well that I saw on another video. On that particular model Weber, the guy had marked the canister on the bottom, drawing lines where the bottom vent was open, say, 20%, 50% 80%. You can eyeball it, of course, but I thought it was a great idea and I thought that I'd pass it on to you.
Thanks for that tip. I always find myself peeking in at the top while adjusting the vent at the bottom. Marking it would make it easier to adjust the vent.
Thanks for the compliment brother! Charcoal grilling can be daunting and I wanted to help make it easier for others to jump into it. I'm a foodie and I love great tasting food.
Disregard tip #3 and use one pair and always keep it close to the heat or over the heat to kill bacteria, if you use two pairs one to out the meat in the grill-then the second pair is still gonna be handling raw meat when you flip for the first time which in case it serves no point.
Good to hear! I'm impressed with the longevity of these grills. I've owned my Weber for about 7 years now and its still in great shape...and I don't even cover it, haha.
Great tips! I abide by them all, been charcoal grilling for almost 20 years. The only thing I do differently is that I strictly use mesquite charcoal lumps. As far as the charcoal starter, I've found that rolling 3 or 4 napkins and soaking them in avocado oil and firing them directly beneath the charcoal already in place without a starter works amazing!!!! Thanks for the vid
Thanks for the feedback! I'll give the mesquite charcoal lumps a try one day. I agree with you on the different ways of lighting the coals with the chimney. I have also used napkins soaked in oil and it works. I've been considering switching away from newspaper because it produces heavy smoke and ash. I plan to buy the electric lighter you stick in the coals and see how that works out for me.
I've been living in apartments my whole adult life with no patio, now I finally have a house with a deck and just ordered a Weber kettle grill online last week I'm excited to get started barbecuing. Thanks for this video
Congratulations on moving into a house from an apartment. You'll definitely have more room to do all the things you never could due to restrictions of living in an apartment. Good times are ahead for you bro!
Thank you for sharing your barbecue tips! My 12 year old son has been asking for barbecue lately. I bought a grill from Lowes but had some trouble my first try. I am a widow and live alone with my kids. I really was getting emotional yesterday while we were barbecuing. RU-vid videos have been a savior. Thank you! Thank you! Thank you! 🤎
I love the uniqueness of your name! Awww, such a heartwarming story, I'm glad to hear you were enjoying barbecuing with your kiddos. You can teach the oldest how to grill at some point and he can help you out. RU-vid has been super helpful for me too. Back in 2012 I moved into a home a I had tons to learn and came to youtube for help, what a life saver. I figured it was my turn to give back and that's when I decided to make my own channel =)
“Don’t serve raw meat or chicken, they will never forget that”. True words. I served raw chicken for Christmas. Still get nightmares, and my family still jokes about it to this day.
I learned that the hard way too, haha. I like to make my steaks medium rare and my girl associates that with raw so she tends to think I undercook everything now. I don't mind though, that just means there's more grilled food for me, hehe.
I have a really dumb question! (Total beginner here..) The first time you flip (steak is seared on bottom, still raw on top), you use the raw meat tongs or the cooked meat tongs?! Lol
Finally someone talks about cross-contamination Thank you!!! So many people get sick at backyard BBQs and think it's because they ate to much. Sanitation is so critical to a successful bbq.
@@TigreCorazon Raw Tongs! They will contaminate the cooked side, but it will keep cooking so it will be fine. If you use the Cooked Tongs, they would get contaminated, and you would have to wash them before touching food that is ready to eat. Good question!
Pretty good advice here. A lot of these practices come from being a good cook in general. I actually bust out our grill for the first time in ages cause it was a nice day out and I wanted to cook some good food for my fam. Glad to know I did things right. TY!
I live in southern CA and its definitely grilling season right now. I just have not had time for it due to working on the honey do list in preparation for my daughter's birth later this month.
THANK YOU... THANK YOU.!!! I've seen SO MANY videos on 'how to Bar-b-que', and they show you how to prepare & cook the meat BUT, they NEVER explain how & why to prepare the grill itself.!! It was a THOROUGH video... applause.!!
Thank you for the kind words! I wanted to focus on charcoal grilling because I realized not many of my friends and family knew how to use a charcoal grill. Over time a few of my friends and family have expressed more interest in grilling. What's next for me is learning to use a griddle and a smoker.
@@ChavezDIY well you already know grill preparation 101, so i'm sure you'll master griddle & smoker. the important thing is to be thorough & simple and not to skip even the smallest detail because many of us are still learning, which you understand. And yes, i will buy me a Weber Grill. After watching so many video's & then your recommendation, i am convinced that is the "go to grill". I just did a party & ruined it. i used a local grill i bought & i was smoking the brisket for about '7'' hours & still wasn't done.!!! Questions- A) so you use the same amount of Briquets & lump coal on a brisket? B) do you use a water pan? oh by the way, how long do i sear the meat?.....thanks..
I’m just getting into charcoal grilling and I having some failed experiences. I found your video and I’m excited to try things I learned. Solid tips. Thank you. You are awesome.
I was given a piece of advice several years ago, which you also brought up. Use a thermometer. Spend the money on a good instant read thermometer. I have spent $25 to $70 on the 4 that I have. All work extremely well. My cooks have improved dramatically since I've started using them. Don't rely on time, look, or feel. I've even started using them when I cook indoors in the oven. To me, this is the best advice I've gotten although all of your tips are very useful ones.
I've been grilling for quite some time and just happened across this video. I actually never paid attention too much to the positioning of my lid with the vents. Makes a lot of sense and can't wait to try it. Awesome video and thanks for sharing!
Awesome find in the woods! My jumbo joe doesn't have a thermometer. Some ppl drill a hole and attach one and others just put a thermometer on the grill grate that stands up on its own.
Weber sells replacement parts for the Smokey Joe so those grills can be completely refurbished. I’ve owned 3 of them. They’re a bit too small to do the 2-zone method, though. They’re really best at direct heat cooking.
Great video. Great tips. I have grilled over 500,000 pieces of beef to order working in busy Tustin California restaurants. Fire + Food = Fun. Cooking, even at the highest artisan level, is really only two things: 1. Combining ingredients in proven ratios, and 2. the controlled application of heat. Grills + the right charcoal lets you deliver all kinds of heat. 2-zone method gives you even more control. If you are going to grill one thing and be done with the grill then go for lump but if you are hosting a party or planning for multiple rounds of grilling then briquets will give longer, more consistent heat.
So awesome to hear about your extensive experience! I like the way you put it, "Fire + Food = Fun". So true! The ratios of ingredients is something I still have a lot to learn about. I agree with you on the use of lump coal vs briquettes.
Ovies thanks for the compliment brother. My dad never grilled and I didn't have any family members that knew what they were doing. So it was quite a learning experience, haha. Cheers!
You covered ALL expects of griling! I was wondering WHY my heat kept goin out n why my heat wasn't HOT! Well it was bc I had the bottom vent CLOSE! After opening ALL vents my heat kept for a long time and stayed HOT! Thank u sooo much! God Bless!
Glad to be able to help a fellow griller! I usually just keep that lower vent wide open. Only time I close it up a bit is when I try to smoke some pork ribs on the kettle grill. For the ribs, I also add a water pan above the coals to help bring down the temps.
I’ve got Tip 11 & 12 to add to get that perfect cooking down. Get temp probes (especially if you’re smoking the meat) and always pull the meat off a few degrees prior to the finished temp you want but instantly wrap it. That’s where a lot of your juices are going to stay. When the temp begins to lower, the amount of juice leaving the fat reduces. When you allow the meat to reach final temp in a wrap, you’re able to save a lot of the juices and the flavor it carries. If you care a lot of aesthetics of your food (especially if it’s meat that will develop a nice bark like a brisket) you want to look into butcher paper. Amazon has it pretty cheap, foil will strip the bark away easier.
Those are great tips. That's a good point about removing the meat a few degrees before target temp and wrapping. It makes a difference on beef. I will look into using butcher paper, I have never tried it.
Thank you so much for the informative and speedy response. I will try the 2 zone method this year [I've only done it w turkey in the middle]. I live in Southern California, so it's our family tradition to barbecue a turkey outside -- Thanksgiving and Christmas. I'll let you know how it works out. Thanks again!
Thank you , Thank you, Thank you!!!! I just purchased a Webber Smokey Joe 18 inch” grill and it’s the first time dealing with vents etc... I had no idea what to do!!!! I used to have a Webber Q grill but very heavy. You’re the king of the grill masters!! My neighbors have Webber’s but I wanted something on a smaller scale. Once again thanks for your concise instruction. It’s made a world of difference to me!!!! 👏🏽👏🏽👏🏽😊
You're welcome! For the best taste and tenderness, charcoal is great. Propane is good for when you need a quick grill or reheat because it's convenient.
First, I don't work for Weber. I've had my 22" Weber on the front porch of my Mt. Cabin uncovered, in the rain, snow, wind, dust etc. 24/7 for over 25 years and still works great. You can't beat a Weber.
That's awesome! I am terrible at taking care of my Weber, I have it outside in the southern California sun/rain without a cover. The only thing that's messed up on my Weber is the aluminum ring attached to the base that holds the ash tray in. It got loose and would fall out easily. I just used JB Weld Steel Stick (putty) to hold it in place and have had no issues for a year now.
Bought my 22" weber this spring. Had one years ago but have not had anywhere to grill for a long time. My daughter made me a patio for Birthday/Mother's day present. I had forgotten how great they are. I use it all the time. Thanks for the great video. Wonderful reminders for me.
I'm new to using a grill. So I went to RU-vid for instruction. I've watched 2-3 "How to use a charcoal grill" videos and yours has been the most helpful, Thank you for posting it.
Love how jazzed up you are to do this video 😂 I'm getting a little charcoal drill next week and I'm so pumped to cook on it, cooked over open fires a few times but they can be a bit hard to control, thanks for the tips!
Haha, What can I say, I'm a foodie! Food puts me in a happy mood! Should be an easy transition for you to go from open fire to a grill. You're welcome!
So true! I've watched BBQ Pit Boys videos in the morning on an empty stomach and I always say, never again! Same goes shopping for groceries too! I usually come back from the store with more food that's not on my list when I shop while hungry.
You're awesome man! Relatable, easy to understand and pretty entertaining to watch! I am 23 and am just starting my family! I appreciate the advice and wisdom, from one family man to another 🤘
Thanks for the honest feedback brother! It's hard work being a family man! Taking on the responsibility of being a dad has made me a better man. Enjoy the ride!
good job. If you're doing chicken, put a disposable aluminum pan next to the coals to catch the drippings. Can also bank the coals on the sides, pan in the middle.
Thanks! I typically don't use a drip pan and let everything go down and eventually into the ash tray. I know it makes for rock hard ashes but its not so bad to cleanup. Some items that are heavy in fat I do try to use a drip pan. If you trim the extra fat on poultry it shouldn't produce too much drippings. I did bank the coals on the sides when I roasted a turkey on the kettle grill.
Out of the few videos, I have watched, this was the best. I wasted time on the others. Sonething about your personality as well as how infornative you are, while still being quick and to the point. Thank you. I now feel ready and excited to grill tomorrow.
Thanks for that feedback! RU-vid content creators know they make more money the more videos you watch so some people stretch out their content. I just want to give out info as quickly as possible, I just wish I had more time to make more videos. My kids and my career keep me busy.
Great tips man. I usually place some foil in the indirect side. At end of cook, i'll ball it up so clean side of foil is outside. Then I use the ball of foil to scrub down the grates while they are still hot. Super easy clean and grill will be ready for you next time you fire it up! I only do this when there aren't too many drippings. If it's a cook with high fat, I'll just discard the foil because it will be too messy to ball it up.
Thanks man. That's a good idea about using the drip foil to also clean the grate. I know other ppl use a drip pan to make the clean up easier, but I still don't use one. The downside to not using a drip pan is that the fat drips into the ash tray making it rock hard and challenging when cleaning out the ash tray, hehe.
Sounds like you're going to be grilling this weekend. That motivates me to fire up my grill too. I have a rib roast I bought from Costco in the freezer, maybe I'll do that.
I just got a new grill on Memorial Day and have used it a few times already. After watching this it's good to know I'm still doing everything the right way.
That is a very good explanation about how to use the grill properly that is a very good concept of everything that you explain step-by-step I hope everybody else is listening to your examples that you trying to explain what is the right way and what is the wrong way that is very good keep up the good work anyway be safe cookwell be very careful in what you do I know you do but anyway God bless you and your family would love and prayers and blessings throughout the whole day with all of your friends and evening to amen start grilling good explanation take good care God bless amen I live in Honolulu by the way I watch these kind of videos aloha
Thanks for the blessings brother! I appreciate the feedback, it helps guide me in making videos that are helpful to others. Never been to Hawaii, but one day I will. What do you grill out there in Hawaii?
Just wonderful, I have been researching "how to light a bbq pit" for a while now, and I think this has helped. Have you heard people talk about - Ariafan Barbecue Babassu - (Have a quick look on google cant remember the place now ) ? Ive heard some decent things about it and my mate got amazing results with it.
Cheers for this, I have been researching "bbq videos" for a while now, and I think this has helped. Have you ever come across - Ariafan Barbecue Babassu - (do a search on google ) ? Ive heard some unbelievable things about it and my mate got cool results with it.
Thanks so much for an honest and helpful video. I'm definitely using 3 tips; 1. the charcoal chimney 2. The 2 side charcoal 3. Weber grill Again thank you, you seem chill AF.
I'm jealous of that weather in the LBC, hehe, it gets hot up here in Whittier. I grew up in South LA and even the weather there is cooler than Whittier. Happy grillin' bro!
Thanks for the feedback! I see a lot of youtubers stretching their videos unnecessarily just to get to the 10min mark because their video can potentially make more money at that point because they can put more ads in it. My goal is to have fun, get to the point, and help out other people.
Miguel tip number 11 salt and pepper and a little Sugar just sprinkled on a Steak will be awesome as a Retired Army Chef the Sugar will Carmalize this making the steak taste great good VID dude Mike G......
Excellent tutorial, I always considered BBQing a simple job and never actually researched what each component on a kettle bbq does. And boy, how many things I have been doing wrong! I was also researching and looking around different types of BBQs from Kamados to all sorts of other configurations. The fact is, that you can have great results on an traditional level BBQ, as long as you take some time and instruction to understand how they function! many thanks again!
Interesting, I always considered BBQing daunting. It took a lot of trial and error to get a good feel for what I was doing. I have never owned a Kamado because they're pricey, but people that own them seem really happy. Another user told me about Napoleon grills too which seem like a luxury Weber. I still have interest in getting a Blackstone griddle so I can make tacos and quesadillas.
True, practice makes perfect, unfortunately here in the UK, we get probably 2 chances a year for an outdoor BBQ, so there goes the opportunity to practice the technique!
Thankyou, this is very helpful. My next step in becoming an American is learning how to grill with charcoal without burning the house down or poisoning my guests.
Just got my first house and my brother gifted me a grill. I'm trying to become the best in the family and watching this video makes me feel like I already know things that will give me an advantage such as the chimney and placing the coal on one side with the vent on the opposite. I trust you and I'm ready!!
Thanks brother! I am surprised how well my weber holds up to the elements considering I have not had a cover on it for four years. The only issue I have had was the bottom round part that holds the ash tray seems to be made of aluminum and after the ashes are loaded with fat and grease it gets heavy and mine fell off. I used a JB Weld SteekStik putty to keep it firm in place and have had no issues for a year thus far.
Thanks for the feedback! My goal with this video was to help beginners avoid all the mistakes I made when I started. It's not perfect but its a good foundation. I have a write up for a part 2 with more tips which I plan to make at the beginning of the spring this year. The pandemic has been a huge setback for me with regards to making videos but I just take things a day a time. The pandemic has been brutal, stay safe!
