This is probably a stupid question but where is the air you are adding to the milk coming from? The steam wand injects steam which is water vapour. This will condense to water as soon as the temperature is

Its a brilliant question!! I do see beginners struggle with this concept so I usually omit it altogether. But what's happening is the force of the steam is pushing the milk away and leaving an air gap where the milk was. That air gets mixed into the milk and when the whey proteins β-Lactoglobulin starts to denature from heat, the hydrophobic end of the proteins essentially encased the air bubbles in the milk.

I’ve been a barista for 5 years and this was the best tutorial in regards to steaming milk that I’ve ever seen, or trained to do. Explaining in depth the reasoning/science behind it made it so much easier to remember. I hate when people don’t explain the “why” to things and expect me to care more about applying those lessons😅

Your tips really helped me. I always had too much air. So the lifting jug to stop injecting air helped. Now the patterns are more defined

i got a bartender job about 5 days ago and the milk was giving me such headaches. i kept messing it up. yesterday, i watched this video and applied everything, and it helped me out a ton. i was actually satisfied with almost all the macchiatos i made today. thank you so, so much for explaining everything so well! 💖

Amazing video, really well explained and easy to follow even for beginners. I worked as a barista my first few years in London but have been working in finance in the last 3/4 years. I am now starting a business so I want to get a weekend job as a barista just to cover main expenses and I thought I would get a refresher on all of it. I am so glad I got amazing training to begin with years ago and these things still stuck with me because I didn't find any new info in the video and that's a good sign! Many thanks!!

I'm researching for my ideal home set up after not working in coffee for a while...but I did for 9-10 years of my life (started almost 20 years ago) and I was watching this video to see if I could test myself on what mistakes you'd mention and HOW they affect the milk....and I passed my own test. 🤣 I miss working in coffee so much and I'm so glad I had such great training and exposure as a young barista! So cool to see all the content on RU-vid these days about it.

Wow… after watching this, I immediately went to go make a coffee and concentrated on the stretching phase (and eliminating the screeching noise) and my latte was 1000 times better. This was extremely helpful.. and your voice is very nice to listen to as well :] :]

I've watched a lot of milk videos because I still think baristas have a hidden magic wand. But your video makes the most sense and you were showing your hands a lot and I didn't see a wand. I'll keep trying and trying because I love coffee. Thanks....

Really like how you explain things with such clarity. I was given a beautiful espresso machine that cost more than my first car. It seemed only proper that I learn how to use it correctly and so I began watching many videos on steaming milk. Some are pretty good- but after I discovered yours I knew I didn’t need to look further. I like your style- authentic and funny- and most importantly, I can finally make a good “micro- foam” after following your directions re: what to do and what not to do. I’m going to keep watching- thank you

found your channel researching the bellman.. I've been missing my barista days and this brought so much back! happy to report i was pretty well trained so learned not to do any of these lol. been looking at the Flair and Bellman as an entry point to getting back to making drinks at home. Using a moka pot and an immersion blender to whip the milk, which is tasty for what it is, but could be so much better..
