Casa Taco is, in my opinion, one of the best tacos in all the state of New Mexico. This cute taco shop is a great reprieve from ski-boating on Elephant Butte, or just a nice stop before you hit the hot springs:

While there are many activities including camping, fishing, paddle boarding, jet ski and more permitted on Elephant Butte Lake, it is also a great place to hang out on the shores and sight see. You can get more information about it here:
