You can use just about any type of flour (wheat, rice flour, gluten-free, etc.) except for Wondra ( it dissolves instantly and does not clump). It's only a matter of figuring out how much water to use with each type of flour. Just make sure to clean it thoroughly after every use, especially when using different types of flour. To be honest, it's pretty heavy, and since it's a manual pasta maker, you'll have to expend some effort pushing the dough through. Ease of use depends on the type and density of dough used.
