I am so sorry for your loss. We missed you guys and glad you are back. My husband just lost his grandfather who passed so sudden but he also went to be with our lord. We will be praying for your family .

They were delicioso! I did my own, twist using canned verde sauce, filling them with chicken, sauteed zucchini, onion, and garlic. I used to make them and the fell apart just getting them from the pan to the plate. I think the key is in your abuela's technique of dipping the tortilla in the sauce and getting it coated. I have a can of red sauce that I am going to use to make bean and cheese enchilidas next time. But can not wait to have the time to make the enchilada sauce from scratch.
My Mom and Nana made cod this way. Some times they would add withe or green onion and chopped cilantro to the egg mixture. So that is how I make it now. So yummy.
I can't eat fish.. But I made this for my friend and she loved it also she loves hot Chile so I made another red one on the side ... Chile puya and tomatoes and abolo..(tree) in Spanish.. Sorry I forgot how to spell it.. .. My friend loved the fish!! I hope to meet u one day u remind me of my great grandma tht passed a yr ago... From your voice to to your little cute face like hers :)
