Last summer while fishing in Kyuquot Sound on Vancouver Island, we checked out our friend Henry's salmon smoke house and he showed us how he prepares his traditional smoked salmon.

My name is Kitty Kanhoffen, I am a teacher as well as an outdoor enthusiast. My passion for the outdoors first started when I was introduced to fishing through my husband Daniel in 2012 and it expanded quickly when I began co-hosting on Fishing with Rod. The curiosity did not kill this Kitty, but has only furthered my passion beyond fishing, which now includes foraging and hiking in British Columbia, Canada.

Finally a video showing someone smoking salmon WITHOUT all of that added salt and sugar! Just the salmon and alder! Thank you- I bet your stuff is simply AWESOME!!

Kitty you are so open, honest and humble. Those are such rare characteristics these days that I find myself sort of dumbstruck. It is just like a little music for the soul when times, like this, cause everyone to seem so anxious and temperamental. Henry was just as refreshing. I feel like inviting everyone, from the comments section and the video over, for a bonfire and to swap stories until it gets late and, at the end, expect to feel unfinished because there is so much life to share and never enough time.

It truly is a breath of fresh air, and I know that you mean every bit of it. I wish I could see myself through your eyes, I know how many flaws I have.🤪 I'm stubborn, selfish, I worry A LOT! I love my big smoke house, I have done a little bit of salmon but mostly moose. We follow my wife’s family’s traditions and make dry meat(jerky) and tan the hides. It is a great way of life and love learning it. Thanks for these videos, usually it’s shed hunting time now but winter is holding strong this year

I found this so interesting!! I'd rather spend a couple days learning how to live off the land aka prepare the fish, than catch it! How long does it take to smoke the moose? Thanks btw, now I'm hungry! :P

Yes I agree with you and so much to learn. I have learned a lot about using all of the moose/elk etc that I was clueless to before. I enjoy making the jerky and tanning my own hides now and so much more. Typically can do the moose in a day or two but that’s just the smoking takes a bit more work before and after to have it all done. Even after my wife still goes further and makes pemmican and other traditional treats, I stop at the jerky lol

I could snack on this stuff all day, and NEVER FEEL GUILTY! LOL I would say the smoked salmon is neck and neck with spot prawns!

awwww. I just missed it. got in at the end then it cut me off not even a minute later. I'm normally at work at this time but i got off early today. It was still the best 45 seconds ever.

Being able to experience it first hand was incredible. As an educator a huge part of our curriculum is teaching about "diverse characteristics of Canadian First Peoples community and culture," and focusing on topics such as food. I can't wait to pass down his knowledge to my students.

Rodney put link to this vid on FWR. Mouth was watering. Like the idea about having the wetter wood as it will smoke and wood will burn for a long time. Plus flavour & texture of smoked fish is AAA or A plus. Interesting.

It felt very spiritual standing next to the fish slowly cooking. Then when the one piece fell, my first reaction was to put it back on the stick. Instead, he tossed it into the fire, and referred to it as "sharing." That means someone watching from above wants a piece.

Natives are so talented. Beads quilts arts canoe totem and going to higher learning. Worked with a native at one job and he was so good natured. Easy going but hard worker.

Great video! I got to try some a long time ago in Alaska and it was great. I didn't think it would be that good because they didn't add any seasoning but I loved it.

How do you like the trout compared to salmon?

@@KittyKanhoffen they are both great eating fish and taste very similar... I would say the trout tast a little less fishy.

@@daltontalbot2201 I wiiisshhh BC had more Brown Trout fisheries. The only trout I've actually tried are rainbows/steelhead.
