Conkies are a traditional Bajan delicacy eaten especially during the month of November. After harvesting corn, pumpkin and sweet potatoes for the fall, these ingredients are combined with grated coconut and a few spices to created the most delectable sweet treat created in banana leaves. These sweet treats are eaten with breakfast, lunch or as a snack anytime of the day. All bajans love and enjoy a good conkie
2 1/2 lbs cornmeal
1/2 cup flour
1/2 cup raisins
1 lb sweet potatoes
1 grated coconut
2 1/2 lbs pumpkin
1 tsp allspice
1 tsp nutmeg
1 tsp cinnamon
1 tsp salt
2 eggs
2 cups water
1 cup milk
2 cups butter
1 tsp almond essence
1 tsp vanilla essence
2 lbs sugar
banana leaves
Great the pumpkin, potatoes, coconut, Melt butter and beat eggs.
Combine all other ingredients in a large bowl, blending together well put spoonful of mixture in square banana leaf, watch video for folding.
Place in steamer over a pot of boiling water.
steam for about 1 1/2 hours. let cook and enjoy
