BARBADOS ROTI SKINS STEP BY STEP

Roti is a popular food in Barbados and through out the Caribbean. The Roti is a dough made into a skin that is eaten, wrap with curry stew folded tightly. The stew generally contains potatoes or vegetables and a meat such as chicken, goat, or beef.
Recipes calls for
6 cups of flour
2 tsp baking powder
2 tsp sugar
1 tsp salt
2-3 tsp oil
Extra flour
2 cups warm water
Combine flour, baking powder, sugar, salt and oil together.
Add warm water into well of flour and combine making a sticky dough
Divide dough into 10 to 12 pieces, roll into ball and let rest for 15 minutes
After 15 mins roll dough out with rolling pin
layer with oil and butter or just oil and sprinkle with flour
cut in center and roll in cone ( see video for details
let rest for 15 minutes.
After 15 mins sprinkle with a little flour and with rolling pin roll dough into a circle, place dough onto a round heated pan, brush with oil and flip, oil again and flip for about 2 mins remove from pan and clap causing layers to break Enjoy a delicious roti skins wrapped in curry meat.

From Puerto Rico here fell in love with Roti while flying for American Eagle and overnighting at the Acra. Eating Beef potato Roti from Chefettes. Yours is the only recipe I use! Thank you! Awesome explanation!!!

I remembered loving eating this from food trucks by the beach when I was in Barbados 19 years ago. The memory is still clear to me. Idk if I’ll ever get to return but now I can at least try to make something similar. Thank you!

I know over the years people have been unwilling to share some of their secret recipes. I believe Barbados has some unique recipes that's becoming a dying art if not shared with the next generation.

Thanks so much! Brenda remember what I said in the video you have to play around with the flour to get it right, you are not going for perfection. Don't say you will never be able to make them, give them a try if you mess up no one has to know throw the flour out and start again. It's not that hard to make just a bit time consuming. Also we have Kulpepper restaurant in Brooklyn and Trini Roti 🫓 on Fulton ave in Brooklyn but I think your in Bim so you get the good food all the time over here it’s a delicacy

@@brigadiergeneral2399 I am familiar with Culpeper restaurant, I lived in Brooklyn for many years, but now I live in Florida. I miss not being able to go and pick something up when you're not in the mood for cooking. There is no west Indian restaurant close to me so I just make my own meals.

Hey Tina... Hope you are fine and everybody as well! You know what we used to eat this roti alot in Pakistan. We used to say this here... In urdu language.. "ball wala paratha" this is so crispy so layered... And we eat all kind of gravy.. Vegetables... Meat... With it! And you taught us so well.. I am impressed because you people never prefer that much this roti or paratha there... You prefer bread.... It made me so happy that any English lady is teaching this! 🙃 Love and Respect for you...

Hello thank you so much for watching! All you need is a good heavy pan, what ever you have at the house will do. Your heat should be set to median that way nothing burns. Hope you like it let me know how there come out.

I have one tip for you. Put Roti skin on hot tawa when bubbles start to form flip it and oil that side then flip again and oil the other side. You can then flip again until they are cooked

Yes you can split the recipe in half! But you can also make the extra and freeze them for later use

I don't know how some of the Caribbean started calling it "roti SKIN"? The skin part does not sound appetizing lol. It is simply a roti. In Guyana this is called oil roti or clap roti or paratha roti. Anyway, looks good. Beside curry or stew, it goes well with corned beef, tin mackerel or sardine.

You or company need to make roti skins and ship to usa,they will fly off shelf.Ive eaten many and often wished the skins were like the ones at home.

We have a large percentage of persons of Indian descent in all Caribbean islands especially the larger ones such as Trindad and Guyana (ok, technically that's south America, but still considered Caribbean, lol) so that has influenced the popular foods there as well 😄 I'm from St. Vincent and we make roti skins similar to this. Trying to find a similar recipe. Lol

Carneta Frazier was my home economic teacher in high school Barbados I was about 13 or so but I love the kitchen. One day I hope to go further but I am shy. I am proud of you.

If you do not want to clap the hot roti, you can put it in a closed plastic mug and shake it up.

My aunt used to make the skins, she was a perfectionist and would throw the ones she didn’t like to the dog in the yard and me with my nasty, likrush self would go in the yard and eat them for him- poor Bandit😢😂😂😂

what a disaster! I think I used the wrong type of flour. That thing was sticking everywhere and just when I had my dough ready for the pan, the damn thing would break before it even hit the pan. I will not give up! Gotta get the rottis done!

Good for you, I will not give up that's also my motto. What causes the dough to break, sometimes the dough is not worked enough so the gluten does not develop or you may not have had enough water keeping the dough moist. Be sure to add enough flour to make the dough moist, but you have to be careful adding to much flour, sometimes when you are kneading the dough it looks sticky like you need to add more flour but most of the time you don't, just keep kneading and it will all come together eventually. If you are kneading by hand give it at least 10 mins. mixture 5 to 7 mins.

Am Trinbagonian and that's not how our roti is being made, she's trying to make what we call buss up shut, roti is made with split pea filling which is call dhal puri.

It’s called oil roti or paratha roti in Guyana, the one with the splits peas filling is known as dhal puri or poran poli in India but it is not soft as the West Indian one , also she did a very good job I am proud of her , after living in Barbados for a few years I remember well how the people there go to this Guyanese man to purchase roti , so that’s a big accomplishment right there .

Sorry to say bajan don't make roti skin like this,they just make it thin no clapping, Guyanese and Trinidadian make roti like this , bajan eat roti wrap up with curry inside not like that.
