I am old-fashioned, I guess, but I prefer to use regular carrots, peeled and cut into preferred sizes. Why? Because they seem to be sweeter, plus the so-called baby carrots take forever to cook - look up how they're manufactured.

I agree with you whole-heartedly in regards to the preference for regular potatoes provided their sweetness flavor and quicker cooking time. Yet I did look up how they're manufactured, and assuming you're referring to the chlorine excess levels, I sent the most relevant video your way to get your thoughts, in case you meant something else and want to share. If not, then this link is available to anyone else interested!

Those packaged baby carrots are washed in Bleach. I wouldn't suggest ever using them.

I've never cooked a ham from it being raw. But I had all of this boiled cabbage and pulled up this recipe that I'm going to try!

You don't have to do all this! This is a hearty fall meal that is much easier to make than shown. In a huge pot put the whole ham butt/shank in the pot cover with water put on high. Wash potatoes cut in half drop in pot peel onions drop in pot whole or cut in half. I peel turnips, parsnips, and rutabaga cut into medium pieces. Add carrots peeled and cut in half. Cut cabbage into four pieces remove core throw everything into the pot. Let boil for a hour then start to test the root vegetable. When all are soft food is done. I feed a family of six several meals breakfast lunch and dinner. For breakfast put food in a strainer cut up so ham in small bite size peices. Make sure you put the strainer over your pot you want to keep all that liquid gold! Fry the vegetables and ham in butter until you have some nice browning on all. You just made red flannel hash guaranteed to keep you full and warm while cutting that firewood for the winter. After two dinners two lunches and three breakfasts everything but the bone some and the liquid. Clean two pounds of dry split peas throw them in the pot with a couple of fresh diced onions. Cook until the peas are soft remove the bone pull off all the meat left and give the dog the bone. Use a submersible stick blender in the soup until you get the consistency you like. Enjoy several frugal meal straight out of the heart of Maine! The amount of root vegetables added depends upon how many people your feeding and how many meals you want to get out your budget. Ham you can find on sale at least once a month for .99 to 1.49 # potatoes 5# 1.79 3# carrots 1.79 cabbage .33# Parsnips and the rest are cheapest in the fall as this is there season. I have seen them from .10 to .99# depending on how good the season was. Dried peas 1.00 a # bag.

I throw the ham & bone in there. I don’t even chop the meat. While it boils the ham falls off the bone in that hour. Also how do you not eat this on top of rice? I am from the south we eat everything on rice!
