Wow Kent, as an Italian born on the Abruzzo mountains lasagna cooked on charcoal is just beyond awesome! I love the way you made the sauce from scratch. I would toss some red wine in the meat too when braising it. Man, I'd love to eat the cowboy lasagna! Keep up the good work!

Hey to my favorite Cowboy. I grew up in an Italian family, I'm half Italian. I have to be honest about the tomatoes tho. I use good quality store bought whole tomatoes and crush them between my fingers. Chop up lots of fresh garlic, onions, and green peppers and Italian seasoning and let it simmer. My Grandma, RIP, always said to make this good, "there is no healthy way to do it for these light weights," LOL. She was serious and I didn't argue with her, right? Love your Cowboy spin on this lasagna. If my grandma could've met you, you would just love her, she wasn't quite 5' ft. tall and only about 110 lbs. and wirey as the dickens, LOL. This lasagna make's my mouth water. HO, HO, HO, and Merry Christmas to you and your family as well. God Bless.

In my family we almost always have turkey for Christmas, but I remember one year where my sister and I insisted we have lasagna instead. She doesn't make it often, but my mom makes a really good lasagna - and she's not even Italian! :)

Kent my good friend & Christian brother, great recipe & you know i'm Irish so that is why you like the Kerry brand butter, comes from Ireland. a couple of tips #1 if you can find them use San Marzano roma maters as are best in the world( sweet & very few seeds) cut a small X in both ends of the maters, just deep enough to go thru the skin & skin will peel off easy after boiling & just peel at one end in quarters downward. # 2 if you find it, use real parmesan reggiano ( usually comes in wedges) & grate it fresh in place of cannister cheese, difference is like a prime ribeye vs. a bad, tough round steak, lol. Looks epic! As soon as I figure out how to translate this recipe into English (English) I'm giving it a try! When you said 34' outside I thought wow Texas it's warm in winter, then realised you were talking about that Fahrenheit rather than Celsius! Hi Kent! Kevin’s wife Marjohn here. I think you might make it as an honorary Italian. I did! Theresa taught me in 1970. You did everything nearly perfect, especially the “red gravy” and the real old fashioned noodles. My one tip, make a few more of those noodles next time. I start with the red gravy, noodles, then meat. Next put more noodles and then add your cheese and top with noodles. Then more meat. Repeat until you run out of fixings or pan height. Top all that goodness with shredded mozzarella and parmigiana Romano just like you did. The extra noodle layers keep the cheese pretty. They also let you feed a huge family without breaking the bank. In the oven put a layer of foil down to catch drips. I would hate for Shannon to have to take out the rolling pin. Some Italians are hot blooded too. They spice theirs with dried red pepper flakes and seeds. They also eat sour and spicy little peppers with cheese and cold sliced meat called antipasto. For family Christmas or anytime you are feeding little ones put the “Hots” in a shaker on the table for the brave with cast iron stomachs. Our Red River Ranch arrived! I need to thank you for helping me with my friend Maureen. She was going through chemotherapy and felt sad, sick and lonely. I brought her your “great day above the grass” tee. It was the first time I saw her laugh in quiet a while. She wore it to chemo and her nurses roared. Thank you so much!

Cowboy Lasagna? Now that shore brings back some memories. I remember when we'd be out on the trail and we'd come up on some Italians. Now they was kinda mean and always hungry - and it seemed like they wanted lasagna more than anything, except for our women. So naturally being an accommodatin' kinda folk, we's learned ourselves how to cook up one heck of a good lasagna. Almost as good as Cowboy Kent Rollins, so I won't bother to publish our old recipe. That darned internet changed everythin!

It doesn't get much "more gooder" than some good lasagna ! Merry Christmas Kent and Shannon. Extra cookies for The Beag and his protégé, Duke. My Christmas got made last night when I received news that my niece's report came back with some good news... all but one of her tumors shrank. She had a kidney removed a couple of years ago, was told they got it all. Then she graduated from college and landed her first teaching job and found out it had metastasized. She had to resign and begin the fight all over again. That's been the better part of this year. I'm giving thanks to the good Lord above and savoring the news.
