You guys gotta make a bagel bruschetta ( fresh goat cheese, with chopped tomatoes with a little basil/ chopped onions (just a little bit) and drizzled with a little extra virgin olive oil and sea salt) it's amazing! People will love it - this is an open Sandwich concept. Cheers from NYC!!

Do you make Montreal style bagels? I believe they are made quite differently. I think they are boiled in water with honey and cooked in wood-fired ovens.
