Last big event (80 people), 14 tri tips hanging PBC style on my 22" WSM, I gave up on searing before or after, carrying them to 130F and wrapping in foil for 30-45 minutes. A huge hit. But your chimi mayo sauce has me really thinking regarding sliders. Literally SO MANY flavors this could take on. Thanks for making me think again Ry!
love your stuff Ry but I would love it if you gave weight (and ideally metric!) based measurements as well. a tablespoon of garlic is a hell of a lot more than a cup of cilantro despite the insane difference in volume. anyway sorry to sound like a complainer, i do very much appreciate the time and effort it takes to produce both this excellent food as well as the video. looks delicious!
