I wonder why the animations from 2003 through 2007 on Mayday were so much better compared to the current ones (even in 2020).

Trimaran Digital Studio was the one that made CGI recreations of aircraft crashes in Mayday Air Disaster from season 1 to 3, then it was replaced by Pix-Ray VFX studio.
