Thanks. I am more confident on my first turkey smoking expedition after watching this video on spatchcocking, and also the one you have for smoking the turkey. Thanks for all your videos they have helped me immensely over the years.

Just did your method for spatchcock turkey. Found a great dry brine recipe. The combination gave us the best turkey I’ve ever eaten. Moist breast meat and crispy skin. The soup from the carcass was awesome. Thanks a ton.

This was one of the best spatchcock videos, the only other step I suggest is cutting the wishbone out. It makes slicing the breast much neater. Thanks Susie.

I do this every time now as well. It really is nice to do it beforehand and slicing is so much easier once it's done!

This is how I do mine! I’ve done it on my pellet smoker and while the meat was very moist (and not overly smokey- I don’t want my Turkey to taste “hammy”) and the skin was nicely browned, it was not crisp at all and rather leathery. I think it’s because a pellet smoker creates a fairly moist environment. So the last few times it’s been on my gas grill. As for that timer... Glad you tossed it! Fun fact: I knew a guy who’s client invented that years ago. It was based on the older type of ceiling fire sprinkler that detected heat (now they detect smoke as well).

I did this today on my Camp Chef and turned out great. Only 2.5 hours at 325.

I made a spatchcocked turkey yesterday. I have it to our daughter’s family. They claimed it was the best turkey they ever had!! (I suspect they want another turkey down the road)!

OMG, I have been making spatchcocked turkeys for the last 5 years because they cook so much better and faster. Yours was the first video that demonstrated the neck cut after removing the spine. I used your suggestion on my Thanksgiving Turkey and it took one quarter the effort to flatten the bird. In the past on really large birds, I have stood on a stool, or placed the cutting board on the floor to safely break the breastbone and flatten, but this year's spatchcock was a breeze thanks to your suggestion/demonstration.

Nice video, smart tip on snipping the breastbone. I’ve always take. Out the ribs and breastbone....probably just extra work but thought it would make it cook faster. Any thoughts on that?
