Ingredients for 2 servings:
2 young zucchini, medium size.
2 teaspoons of salt.
Vegetable oil (use for frying)
Add a tablespoon of butter at the end of frying.
Grated cheese, about 1 tablespoon.
A few basil leaves for decoration.
Cooking method:
Cut the zucchini lengthwise and make net-shaped slits, salt generously and let rest for 15 minutes. Blot the liquid from the zucchini with paper towels. Fry in vegetable oil. Fry over low or medium heat and cover with a lid. Covering the pan with a lid will give you zucchini that are better cooked inside. Fry until golden brown on both sides. Finally, add the butter and drizzle over the zucchini for a creamier taste. Before serving, add the sauce, sprinkle with grated cheese and basil leaves.
Ingredients for the sauce:
Walnuts 40 grams. / 1.5 ounces.
3 tablespoons sour cream.
3 cloves of garlic.
1 pinch of salt.
Black pepper to taste.
A small bunch of parsley (5-6 sprigs).
Preparation of the sauce: Grind the walnuts in a stone mortar or grind in a coffee grinder. Put the sour cream, walnuts, garlic, salt, black pepper and finely chopped parsley in a bowl and mix the ingredients well.
