If only every weekend was at least a 3 day weekend, what extra fun we could have. What started our family camping weekend in Tumut with 3 days of predicted rain, but ended up having a fabulous sunny time together in Mystery Bay via the Snowy Mountains Highway. Lots of delicious treats were cooked in our camp oven and below you will find the recipes.
MUMMA GIBBO'S SCONES
1 cup fizzy drink
1 cup thickened cream
3.5 cups SR flour
Mix with flat knife, knead and spread out to cut with round scone cutter. Place in a baking paper lined cake tin on a trivet in your camp oven. Put coals on the top and bottom of your camp oven. Depending on how hot your coals are, will depend how long they will take to cook ie. 20 minutes. Serve with jam and cream.
MUMMA GIBBO'S BAKED BRIE
1 sheet of puff
1 round of triple brie
Cranberry sauce or favourite jam ie. fig
Crushed walnuts
Spread sauce/jam on brie, top with walnuts and wrap in puff pastry. Place in round foil tray or baking paper lined cake tin. Place on a trivet in your camp oven and cook with coals top and bottom like with the scones recipe.
CHILLI FOR A CROWD
2kg rump cut into cubes
2 onions
Packet of streaky bacon diced
2 tablespoons of cumin
4 garlic cloves crushed
2 satchels of tomato paste
1.5 teaspoons of chilli powder or chilli flakes
2 teaspoons of oregano
1 cup red wine
800g can of diced tomatoes
2 teaspoons sugar
2 cans of kidney beans
2 cups beef stock
Put all ingredients into a large camp oven, cook with coals top and bottom. Serve with chopped parsley, sour cream and rice.
MUMMA GIBBO'S ONE POT CHORIZO PASTA
2 chorizo's chopped
4 garlic cloves minced
4 small capsicums sliced (2 red 2 yellow)
400g sliced button mushrooms
1 satchel of tomato paste
1 teaspoon chilli flakes
2 tablespoons of red wine vinegar or red wine
1 packet of spaghetti
1 litre of boiling water
Seasoning
Big squeeze of basil in a tube
Place all ingredients in a large stir fry pan over a gas camp cooker and cook until liquid is absorbed and pasta is cooked. Top with parmesan and serve.
