In this recipe, I want to share the recipe for full-bodied, precisely measured milk helva, which is one of Bursa's famous delicacies, along with all the tips and tricks.
Ingredients:
100 grams of butter
A little less than 1 cup of flour (90 grams)
6 cups of milk
1 cup of granulated sugar (175 grams)
Crushed pistachios or walnuts for garnish
Instructions:
Melt 100 grams of butter in a saucepan.
Add a little less than 1 cup of flour and sauté over low heat, stirring constantly. Sauté the flour until it turns slightly golden, without browning.
When the flour starts to turn slightly pink, add the 6 cups of milk gradually, stirring constantly.
Continue stirring over medium heat until it comes to a boil. When it starts boiling, add 1 cup of granulated sugar and continue stirring.
Once it starts boiling, simmer over low heat for 2-3 minutes, stirring occasionally. The consistency should not be too thick.
Remove from heat and pour some of it into a large ovenproof dish and the rest into individual ovenproof dishes.
Bake in a preheated oven with the broiler setting at 230 degrees Celsius until the top is golden brown. It may take about 10 minutes.
Remove from the oven and optionally garnish with crushed pistachios, walnuts, or almonds.
Serve warm or cold according to your preference.
Enjoy your meal!
