Problem with this method is you cook at 1 temperature, which is too hot for some things like your brown bottom egg. A better approach is to season it with oil about 7 to 10 times. That it's truly nonstick at any temperature and stainless steel rocks!
I do this everytime with my stainless steel, but only becomes non-stick when i wash it - it cleans up really nicely and pretty fast But the eggs are there to stay, they rip apart, but never slide around
when u wash it looses it's stickyness. so fry 3 dosa then use. only after 3 dosa it gets ready which means u need to grease and heat and leave it repeatedly for 3 to 4 times
You can check it once and then will have to maintain the pan temperature at that level. So for example, if you're frying egg, wait for the pan to heat up before frying the second egg.
