Mouthwatering, Juicy, and Super Tender Salmon with Sun-Dried Tomatoes and Baby Spinach
Super juicy, tender, and delicious. Simple and easy to make. Perfect when served with plain rice, plain spaghetti, or your favorite vegetables.
INGREDIENTS
• 5 Salmon fillets (7 oz each)
• 2 cups heavy cream
• 1 cup sun-dried tomatoes in oil, sliced
• 5 oz fresh baby spinach
• 1/2 cup kosher parmesan cheese, grated
• 1/2 cup sparkling grape juice
• 2 Tbsp extra virgin olive oil
• 2 Tbsp garlic, minced
• 1 Tbsp butter
• salt to taste
• black pepper to taste
COOKING INSTRUCTIONS
1. Pad the salmon dry with paper towels and season it with salt and pepper.
2. Sear for about 2 minutes per side until approximately 90% cooked.
3. Set aside and reserve for later.
4. Remove any extra oil on the pan.
5. Add minced garlic and butter to the pan. Stir until fragrant.
6. Add sparkling grape juice or apple juice, then simmer.
7. Pour the heavy cream to the pan and simmer it until the cream has slightly thickened.
8. Add parmesan cheese and stir continuously.
9. Add sun-dried tomatoes and simmer the sauce while stirring it. Then add the spinach and combine.
10. Re-add the salmon back to the pan and spoon the sauce over the salmon.
11. Once the salmon is cooked, sprinkle it with fresh chopped parsley.
12. Serving suggestion: serve it with rice, plain spaghetti, or your favorite vegetables.
