I tried your recipe tonight for a party of 7 & it was a HIT. First time making a double baked potato casserole. The only thing I didn't do was bake my bacon... I even baked my potatos the same way and used the avocado oil as well. Instead of wrapping them in foil. Definitely a difference.. I will be baking them like that from now on. My sister called it the middle of your video and I told her what you were making and described what you were doing at the time. She sounded so much like Thomas when she said, "I could eat that!" Now I'll have to tell her what the finished casserole looked like. Personally I was ready to reach through the screen and get some. Like Paula Deen always says, I never met a potato I didn't like! We actually make a twice baked potato casserole every Thanksgiving. My family prefers it over just plain mashed potatoes. Also I love it when Thomas steals food. He is so mischievous!!
My hubby always steals the bacon...many years ago, figured out that I should always fry extra extra extra bacon so I didn't run out for whatever dish I was making that had bacon in it...duh!
This looks great! I will be making this version for sure. I make twice baked potato’s a lot, put taters in microwave for 10 minutes, cut in half, scoop out potato, mash with butter salt n pepper, put back in the skins, top with sliced cheese cris crossed over potatoes, back in microwave for a couple minutes till cheese melts and serve.
I've made this for dinner parties in the past. I removed a lot of the inside of the potato and used the skins (with a little bit of potato left in them) to make loaded potato skins as part of my appetizers. They were always a big hit! I had the casserole with dinner.

I've never made them into a casserole but always put them back into the potato skins, with all their deliciousness and then popped them back into the oven and let them finish cooking. I'll have to try the casserole route...looks delicious!
