Daniel shows you how to make Kimchi Jjim. It's a ugly but delicious dish! One of my favorite ways to make use of aged Kimchi. For those who have never had it, its best described as braised Kimchi and pork. Braising kimchi in broth concentrates the flavor. But also smoothens out the taste. There are lot of recipes on this, but I think our tripe boiling method really brings out that authentic Korean taste.
With this dish, you really don't need any banchans.
Just a whole lot of rice!

Finally got to try my hand at this. I made some kimchi back in June, so I was really excited. Granted, it honestly wasn't one of my most flavorful batches due to my seasoning and brining ratio (something I'm definitely tackling this fall/winter), but whatever. I also made do with tofu, button mushrooms, and a splash of fish sauce in my bowl for extra "meatiness," since I didn't have pork or shiitake mushrooms today. At the end of the day, still turned out tasty and comforting. It reminds of me of how Filipinos usually eat their meals; hot soup or braised meal served into a waiting bowl/plate of rice (don't forget some extra "sauce" from the soup or braising spooned on top)

Ugly but beautiful. The 2 kimchi reminded me of KRAKEN the legendary giant squid 🐙somehow! Long tentacles can be ugly, but definitely delicious! Well done? Daniel. U simplified korean cooking very well! 🏵🏵🏵

I doubt it'll taste as nice with the store bought glass-canned kimchi I found but I'm really excited to try making this! I absolutely love kimchi and tofu, so thanks for making a video like this! *Oh, a question about the tofu - can you explain why you put the tofu in so close to it being done? Is it because they fall apart? I thought the longer you'd marinate it, the tofu would soak up more flavor. It'd be great to know!

Ashley Fisher It's lovely someone had the same thoughts as mine. ☺️ I got sour kimchi from an Asian market a couple days ago. It was too sour and I didn't know what to do with it. So I made this stew following Dan-yul's recipe last night.it came out good. Just in case you didn't know, only bad thing of cooking kimchi is the smell of kimchi stains in your kitchen and on your cloths for a while. So if you ever cook kimchi, I recommend to open the windows and light candles on 😅

Yea!! I think its worth trying if you enjoy Kimchi. Braising it rounds out the sharp notes and makes it really tasty.

Hey Daniel I've made this (your recipe) like 4-5 times already, before i found your recipe I've watched several other videos, most if them used onions and doenjang.. do you recommend kimchijjim really without it? Or is it your personal taste ?

So I have a batch of Kimchi that has been on my kitchen table since last june. This recipe is perfect for it! I want to wait until June to eat it for my birthday. When I make this I'll let y'all know how it goes. I've just been wondering if it would still be good, it smells just fine and it doesn't have any mold growing on it or anything. Maybe I'm just being paranoid. Lol Thanks for another great recipe!

The smell will be strong! But just visually check. If there is actual mold on it, you should toss it in the trash. Otherwise, give it a go :)

Yea, though the key is to let it ferment a little bit. That way, you get the right flavor ;) Or if you don't want to wait, ask the store for 묵은김치 (moo-geun kimchi). This means the ripe kind!

Future Neighbor i have alot of korean friend from my university days. When i use togo to their house, their cute little grandma's would make this dish often. I love korean food and love kim chi very much.

Ah no problemo. If you buy the fresh kind, better to use it in other recipes. Then just save a few so it can ferment for a month... then use the aged ones for this recipe. Or if the Korean mart is big, try asking for 묵은김치 (moo-geun kimchi). This is aged Kimchi - the bigger stores may carry it Julie ;)

That looks sooooo yummy!!! I'm afraid to make the kimchi cuz no one else in my family will eat it. I bought a huge thing of kimchi from costco. Biggest mistake. HAd it for a few months now and barely put a dent in it. I should just make it homemade tho. I'm not a huge fan of the one from costco >.< Anyways! Awesome video!!

Hello 😊 so random quick question, how long can you have kimchi in the fridge? I know it becomes sour with time but what do you consider reasonable?

Hey Ruth, I think it really depends. Humidity-control, type of jar you are fermenting in, whether you properly sterilized the jars before fermenting. But for me personally, I like to eat Kimchi within 3 months. After 1 month, it starts to turn sour. From there, you can already start making great-tasting Kimchi Jjigae (stew) or this recipe here. FYI: Nearly all Korean households have specialized Kimchi refrigerators. With that, you can store up to 1 year - no problem.

I keep our kimchi in a standard American refrigerator in our garage and currently have some happy kimchi that is over a year old . I’ve been known to have and cook with even older if I’m lucky to have some get to age that long. Just remember the older, the more sour it gets! 👍😊

Hmm perhaps you purchased aged Kimchi? Kimchi starts to taste sour as it ferments longer.

Hi Sulto! Tofu is made from grinding up soaked soybeans. Full of protein. Ate it growing up, so am very fond of it!

Hi Blossom! I don't think it will taste good with mak kimchi. The marinade is not the same. And for this recipe, most of the flavor is derived from the kimchi paste.
