Ultimate Lemon Meringue Layer Cake Recipe & Tutorial | Cupcake Jemma

FULL SIZE CAKE ALERT!!! It seems like months since we've got to make any proper cakes at C&D... Oh wait - it is months since we've got to make any full size cakes at C&D! But never fear - Sally's back with a PROPER CAKE for you guys. And cakes don't come much more proper than this: A delicious fresh lemon sponge, lemon curd, lemon buttercream and TOASTED Swiss Meringue icing! If you're pushed for time you can always just stick with the sponge and buttercream and you've still got yourself a banging lemon cake, but I'd recommend giving the full cake a go if you can! INGREDIENTS:
For the Lemon Sponge:
For the size I made (4 x 9" tins)
625g Butter
625g Caster Sugar
625g Self Raising Flour
10 eggs
8 tbsp lemon juice
The Zest of 8 Lemons
For a smaller cake (4 x 6" tins)
375g Butter
375g Caster Sugar
375g Self Raising Flour
6 eggs
6 tbsp lemon juice
The Zest of 6 Lemons
For the Lemon Curd:
Zest of 1 Lemon
65g Caster Sugar
65ml Lemon Juice
3 Egg Yolks
1 Whole Egg
50g Cold Chopped Butter
For the Lemon Buttercream
Filling only:
200g Butter
320g Icing Sugar
3-4 tbsp lemon juice
Whole cake (filling and coating):
400g Butter
640g Icing Sugar
6-8 tbsp lemon juice
For the Swiss Meringue Icing:
3 Egg Whites
225g Caster Sugar

I know right? I've tried doing a one handed cracking and I tend to only get it right 1/3 times with no shell fragments. This lady's a master.

I baked a 3 times 11 inch version of this cake an d took it to work and I can tell you it got a very good reaction. One change I made is to do Italian style meringue instead of Swiss

If the meringue doesn't start sweating I certainly will! I'm going to have Lemon Meringue cake withdrawal symptoms if I don't make this soon!! Get me 100 mL of lemon juice and a dozen free range eggs. STAT!

Because the meringue is cooked(either over a Bain Marie or by sugar syrup), it shouldn't sweat.. Usually only French meringue sweats because it's not cooked in some way

It shouldn't sweat if its cooked/toasted. You can keep it in the fridge for a few days and it stays fine :) x

Tried this recipe and it taste amazing! From the cake to lemon buttercream to lemon curd... i did swiss meringue buttercream for frosting to cover the whole cake. Made the 6" cake recipe❤️❤️❤️ thank you Sally!

Hi Sally, I've got a general question: When I bake different layers but only have one or two cake tins, is it OK to bake them one/two at the time and let the rest of the batter sit or will it change the consistency? Thanks x😊

coffee mug☕ not Sally but I’ve done what you describe lots and it has worked just fine. Just don’t do it with carrot cake as the baking soda reacts with the carrots while it sits and makes little green spots through the cake that look like mould! Ask me how I know 😂

Made this and loved it when I was finished but then as it sat my medicine begin to slid off of the cake. It still tasted amazing but wasn’t as pretty when we ate it. Any tips on what to do to keep the meringue on the cake or what I did wrong?

Oh Sally, I'm so glad you brought the cake back! And I'm a sucker for lemon, so this was so satisfying to watch. Unrelated question: I wanna make Swiss meringue buttercream with peanut butter. How much PB would I need for the 3 egg amount? Do I need to melt the PB first?

Could you perhaps show us how to get the buttercream the perfect consistency, please? I've watched the master class repeatedly but don't know how much liquid to put in. Sometimes mine pipes beautifully, sometimes it looks dry, sometimes it sags from being too wet. BTW, it always tastes awesome using your techniques.

If you want the math for cake conversion it’s fairly simple: Tin height x Pi (3.14) x radius squared (so a three inch tall six inch tin would be 3 x 3.14 x 3 x 3 = 84.78 Where, as in this video, they’re making 4 10” tins, just multiply the answer by however many tins. Then do the same for the tin(s) you want to convert to. Then divide ‘to’ by ‘from’ to get ‘z’ Finally, multiply the ingredients by ‘z’ to get the upscale/downscale amount required. Sounds complicated but having worked in a bakery I can do it blindfold.

Congratulations for Jemma on her new Baby Girl‼️🌹♥️🍼👶🚼🤱 I just made a couple weeks ago for the 2nd time( 1st time failed on making my lemon meringue pie)but I've got my 2nd lemon meringue pie with this nice old lady and I follow the recipe step by step even I pre- prep everything in order so once I follow all the instructions I won't have any mistake. Well everything was perfect until 🙄😏😲my Merengue fail‼️😧😵 I think was because I rinse my metal bowl and even that I dry it very good somehow didn't like my Merengue to be in that bowl...well I try once again in a different glass bowl and so happy that I've made it‼️ My Merengue was beautifly done‼️So fufly and delicious 😋😋😋 Now I am going to try this recipe for sure on Father's Day....but I am going to try a make it a day before and put it inside the refrigerator. Hope is ok to do that❓🤨🤔 But looking forward to made this increadable Lemon 🍰 for My Dear Husband ♥️...his favorite cake is 🍋 Lemon Maringue Pie...but I will definitely going to give him a twist of surprise with this cake... Hi Sally! I was wondering if you had to put a layer of buttercream underneath the curd when you stack the cakes. When I made a lemon cake I put a ring of buttercream around the edge then filled the center with the curd. I couldn’t see the inside of the cake because I made it for my family, but do you think the curd seeped through the cake layers? thanks 😊

You could grill the top on really low heat. Not sure how you'd do the sides though.

I’m half way through this cake. Making it, not eating it. Yet. Just making sure my cakes are completely cool before I fill it. But the sponges are so freaking fluffy and delicious. I always get impatient and dump the flour in at the end. Not today Sally! I did what you said and wow. I’m feeling so completely competent at the moment.
