Dash Mini Pie Maker Ultimate Crust solution using an 8 inch tortilla press!

Ingredients:
1 cup self-rising flour
2 cups All Purpose flour
(OR - 3 cups All Purpose flour & 1 1/2 teaspoons baking powder)
1-2 teaspoons salt
1 cup shortening (Crisco) - may use LARD instead.
¾ cup Ice Water
Refrigerate in resealable bag. Good for 3 days.

Blessings Ken, I made your Mini Pie Maker Crust tonight…and it came out great….it was flaky and delicious! Thank you so much….just received my Masterchef Mini Pie Maker and decided to make your Crust….I divided the Dough into 4 equal pieces and I was able to make 6 pies with bottoms and tops… I want to say “Thank you” for giving us all the recipe! I know I'm late to the party but, I just bought the pie maker, found your video on making the crust, followed it and it turned out exactly like you said. I made mini apple pies using my Fuji apple recipe for the filling. Just poached the apple slices on a stove top to soften them some before letting the slices sit in cinnamon, lemon, drk brown sugar, regular sugar and cornstarch, heated to thicken. Perfect for fllling your dough crusts in the maker. I did brush the tops with melted butter AFTER they came out and sprinkled with cane sugar. Thanks again for the video. I'm going to try your pineapple pies for sure.

i’ve heard that you need to roll out the store-bought crusts out more thinly to get them to work and of course fill it so that they’re touching the top. also, an egg wash might help. if you have to add heat, just put a little strip of foil around the edges so they don’t burn. i saw someone make a dough with hot water. wonder what the difference is

I'd would have liked to seen you press it in the tortilla press and lay it in the mini pie maker. Also putting the top crust on. I can't wait to try this because you are right about the store bought pie crust. I always get my tops too brown in order for it to cook through. Have a great day. Just made this recipe, my first time making a pie crust. I used it to make pot pie from my home canned chicken mix (also a first). The tortilla press came in handy, I glad you recommended it. I also have to give you credit for my knowing how to make biscuits, gravy, and a much improved meatloaf. My husband is very glad I found your channel.

That is a great crust for the pie maker. I was gifted a Breville 4x pie maker several years ago. The instructions say it's OK to use prerolled store bought for the bottom but to use puff pastry or hand rolled butter crust pastry for the top. Using the included cutter, same as yours, one sheet of store pie crust makes 4 bottoms and one sheet of store puff pastry makes 4 tops. Puff pastry also works for the bottom but the pie crust is cheaper if not making that beautiful crust of yours. Thanks for sharing

You are upping my game. I just ordered a tortilla press and previously I didn't even know I needed one. After a lengthy deliberation I opted for an aluminum version to, hopefully, simplify upkeep. I have many cast iron cooking instruments but I decided to give Al a try this time.

Looking forward to trying this! I bought a used pie maker that was made by another company (sorry Dash!--got it years ago) and the booklet for that one suggested using a regular pie crust for the base and a phyllo dough crust for the top but I've never wanted to put out the money for extras. Will be trying your recipe because I'm planning to make some little mushroom onion potato pies for supper!

I'm a purist, so I plan to do this with frozen unsalted butter instead of Crisco. Crisco is hydrogenated vegetable oil, so it's not heart-healthy. Thanks for the recipe!

I believe Crisco has changed their formula and made it healthier. Edit, from NPR: "Unfortunately, these wonderful qualities depended on "trans fats" that have since been implicated in heart disease. As a result, partially hydrogenated oils have fallen out of favor in the food industry. Even Crisco changed its recipe, cutting the amount of transfats in one serving to less than .5 grams. That allows Crisco's label to state that it contains zero transfats."

Sounds like Monty Python's cafe skit, where the customer wants breakfast but no Spam. The old waitress suggests "Well, there's Spam, egg, sausage, and Spam; that's not got much spam in it." While technically true in the context of the cafe's Spam-rich menu, it still includes Spam. Rejigging the recipe to bring transfats below an arbitrarily-set level doesn't reassure me. I'd rather take my cholesterol in good ol' butter. I'm in my 70s, eat a lot of butter, and I still am free of plaque in my circulatory system while not requiring statins or any other prescription drugs. That's good news generally about Crisco, and I appreciate it's vegetable-based, but I prefer to substitute butter. Best not to fix what ain't broke, @@jvallas

We thought my granddaughter had celiac disease for quite some time (they were wrong). And I don't remember the specifics, but I had the America's Test Kitchen gluten free cookbook, and their pie crust was one I really liked. (Their granola, too - it was excellent.) I bought the kindle version of the book to save money, but by now it's probably available as a used book.

*Double-Crust Pie Dough (gluten free)* MAKES ENOUGH FOR ONE 9-INCH PIE 5 tablespoons ice water 3 tablespoons sour cream 1 tablespoon rice vinegar 13 ounces (2¾ cups plus 2 tablespoons) ATK Gluten-Free Flour Blend* 1 tablespoon sugar 1 teaspoon salt ½ teaspoon xanthan gum 16 tablespoons unsalted butter, cut into ¼-inch pieces and frozen for 10 to 15 minutes 1. Combine ice water, sour cream, and vinegar together in bowl. Process flour blend, sugar, salt, and xanthan gum together in food processor until combined, about 5 seconds. Scatter butter over top and pulse mixture until butter is size of large peas, about 10 pulses. 2. Pour half of sour cream mixture over flour mixture and pulse until incorporated, about 3 pulses. Pour remaining sour cream mixture over flour mixture and pulse until dough just comes together, about 6 pulses. 3. Divide dough into 2 even pieces. Turn each piece of dough onto sheet of plastic wrap and flatten each into 5-inch disk. Wrap each piece tightly in plastic and refrigerate for 1 hour. Before rolling out dough, let it sit on counter to soften slightly, about 15 minutes. (Dough can be wrapped tightly in plastic and refrigerated for up to 2 days.) *THE AMERICA’S TEST KITCHEN GLUTEN-FREE FLOUR BLEND MAKES 42 OUNCES (ABOUT 9⅓ CUPS) Be sure to use potato starch, not potato flour. Tapioca starch is also sold as tapioca flour; they are interchangeable. 24 ounces (4½ cups plus ⅓ cup) white rice flour 7½ ounces (1⅔ cups) brown rice flour 7 ounces (1⅓ cups) potato starch 3 ounces (¾ cup) tapioca starch ¾ ounce (3 tablespoons) nonfat milk powder Whisk all ingredients together in large bowl until well combined. Transfer to airtight container and refrigerate for up to 3 months. .

That tortilla press is a great idea. I'm guessing my usual pie crust recipe will work just fine, but maybe someone can tell me why I'm wrong? And I don't quite know why you'd use self-rising flour? But your crust looks terrific.

Hi Ken, Can you create a recipe for southern tomato pie using your ultimate crust? My favorite version for mini tomato pies uses puff pastry. It is good but makes too much to use in a mini pie maker. I am cooking for one or two these days. Donna,NC

If you already know how to make it with puff pastry why not just adjust it down to the amount you need? Try 1/4 amounts and go from there! 🙂

A golf ball size of dough is about right. Just make it big enough to "stamp out" a top and bottom crust. You'll get the hang of it after you make a couple.

I wonder if you could mix flour & Crisco to make a bisquick type mix & keep in fridge for longer than 3 days & add water to make 1 or 2 crusts at a time?

It's just as easy to make a smaller amount as needed. That's what I do. CRUST: ¼ cup self-rising flour ½ cup AP flour Dash of salt ¼ cup shortening (Crisco) 2 tablespoons Ice Water

Ken, have you tried making pecan pie in it? The problem with my fav pie is that a full sized one is just too big for me, I prefer a couple of little pies for only two days of sugar indulgence instead of five to six.

Just a suggestion, but you could buy a frozen ready made pecan pie, and cut it in single serving size pieces to keep frozen, then pull one out and let it thaw. Or I have noticed that Walmart has mini pies in their bakery section. With these you can also buy a few, and freeze them.

@@momof2momof2 .....that's a possibility but I've never frozen then thawed a custard type pie filling. I can get bakery mini pecan pies for a dollar or two but too often for such intense sweetness isn't good for me.

Ken my Christian bretheren, very nice recipe, unfortunately I'm diabetic & I can't have one, but my wife & grand children will sure tear into these, can be cherry, apple, peach, etc...( I might sneak and eat one occasinally, lol), I know you probably don't want to do this as you would like it to be ready to eat right out of the mini, but you can put them on a foil lined cookie sheet under the broiler on high for 1- 2 minutes on 1 rack above the center of the oven to finish the center top crust as that appears to be the only thing not crusty( a tip, leave oven door open 1-2inches & the broiler will stay lit up & if the edges on top of the pie wrap are done/crusty, place a small amount of foil around the pie edge to keep from burning) God bless everyone

Using the oven would defeat the purpose of using the mini pie maker. I would just make a regular pie in that case. Anyway, my pie crust solves that problem.

About how many pie crusts for dash mini pie maker do you get out of this recipe? I don’t know how thick your mini pie crust is.

I don't remember now. I never really counted. Perhaps 6-8. You can try a half recipe if you don't need as much.

I found the tops of store bought pie crust will be done if you fill the pie up full so that the top touches the top of pie maker while cooking. Thanks

I tried that. I could not get it to cook properly and the overfilling needed caused a messy overflow. The pie crust shown in this video solves that problem. Thanks for watching. 🙂

LOL, that's almost exactly how I make pie crust. 1 part flour, 1/3 part crisco, 1 bit of salt and sugar, 1/6 part of ice water with a bit of white vinegar

Butter makes a better tasting dough. Crisco makes it kind of bland.

They make butter flavored Crisco. What amount of butter to flour do you use? How do you combine your butter with the flour? Any special tips using butter? Do you use your Dash Mini Pie Maker to make anything else?

@@KenClick with 1 an 1/2 cups flour I use 1/2 cup butter. Warm it up a little cut it in to flour. I've done strawberry blueberry blackberry peach cherry and apple pies and I used it for chicken pot pies. Works great is more flakey and tastes better than crisco.

@@KenClick you warm it up if just out of the fridge but not to much. Or leave a stick sit out on the counter like grandma did and take a fork and mash it into the flour. Its not hard to work it in.

Crisco is so VERY bad for you. Hydrogenated transfat. Please find some natural lard. It not only makes a better crust but is much healthier for you. Trust me I know. Was almost a gonner last year with diabetes and heart disease after being raised on that frankenfood. Found keto and carnivore and starting to regain my health. Wishing you the best. 😉👍
