In Serbia, the difference between burek and pita is in the method of preparation and how the dough crusts are arranged, and not in the ingredients of the filling with which it is filled. There are many different types of pita according to the way they are prepared. we can even say that burek is also a type of pita, every burek is a pita, but not every pita is a burek. :) Some other types of pies are gibanica, uvijača, sukana pita, etc. You can fill them with anything you like.

@@frostflower5555 Every person is making them differently. It all depends on the type of pie. It depends on the filling, how much oil or lard they put in, or if they sprinkle every crusts with water and oil. Bakeries often add more oil or lard to the burek. Burek dough crusts are arranged without rolling them, just layering them with plenty of filling and oil.

When I watched your Romanian series I knew you would like our food too (or even more😉), but you are on the spot with explanation that it's quality of the foods it self... You can verify it by simply buying a tomato in farmer's market and comparing it to what you get in Canada... (I have seen this in france with veggies in their markets) it's not the same... What you need is a local foodie to guide you to the best places for foods: best burek, best pljeskavica, best sandwich etc.

Next time you are in Serbia, you have to try pork roast from "Mali hrast", Arandjelovac. If you cant bother to wander through Serbia, you can have also one of the best pork roasts in Belgrade, in restaurant BSK (next to the stadium of the same named football club in Borča suburb). It is a bit pricier, but worth it.

Some of the dishes are not considered street food like "pečenje" (it is served in restaurants, kafanas, at Slava, weddings and other types of celebrations; the only exceptions may be grill festivals) and "uštipci" (you can usually find them in restaurants as a dish usually eaten for breakfast, sometimes for dinner and often made at home), other dishes can be street food, mostly in bakeries, but you can find them in restaurants as well. Pljeskavica is a grilled dish consisting of a spiced meat patty mixture of pork, beef and lamb. It can be served with onions, milk cream, ajvar, urnebes (spicy cheese salad), as well as with many other spices and vegetables, it can be served either on plate with side dishes, or with lepinja (flatbread). There are many different types of "pljeskavica" and in different sizes like Leskovačka pljeskavica (usually very spicy); Gurmanska pljeskavica; Šarska pljeskavica (with kačkavalj cheese); Hajdučka pljeskavica; Vranjska pljeskavica; Punjena pljeskavica; ect. Burek is a family of pastries or pies, in Serbia there are three traditional types with meat, cheese and empty, but today there are more types of filling. We have many types of pies, but what distinguishes burek is the way it is made and the lard. This at 11:41 min is considered a traditional Serbian burek and originates from Niš. At 13:29 min both top and under pie in my part of Serbia is called "pita savijača / uvijača", and that pie at the bottom is "burek". By the way burek have origins and is descendant of the Eastern Roman (Byzantine) dish en tyritas plakountas "cheesy placenta", itself a descendant of placenta, the classical baked layered dough and cheese dish of Ancient Roman and Persian cuisine. Name came from Persian burak, the diminutive form of būra or buġra, meaning "stew", and refers to any dish made with yufka (filo). The Persian word bureh goes back to the Middle Persian *bōrak. This word ultimately goes back to the Proto-Indo-European root *bher- which meant "to carve, cut, split".

How do you guys get info on this stuff?? The poor guy who said his favorite Serbian food is pizza is basically how I would have handled that quesiton, I'd just freeze and say something that's not Serbian at all. 😂Here's some more info if you need it at any point. If you get to eat pljeskavica again, other than punjena you could have gurmanska, it's basically a spicy one. Other street food you could try is karađorđeva, although I feel like I've seen you eat it before, and when it comes to palačinke we have savoury ones that can be amazing depending on where you eat it! If you ever have a Milky restaurant around, definitely go there, they serve amazing gigantic pancakes (palačinke), both sweet and savoury! As for proper authentic restaurant meals - pasulj, sarma, teletina ispod sača are amazing! Sarma is what we eat for christmas and new year's eve, pasulj is just beans, we eat it at least like once a week and one batch usually lasts three days and the legend says that the older it is - the better. Teletina ispod sača means veal under sach, it is the tastiest juiciest meat you will ever eat, prepared in a very specific primitive type oven (sač)! And if you like really spicy stuff, try srpska salad with your meal but make sure to ask the waiter how spicy it is. If they say it's very spicy, then it will actually make you cry - been there!

Another fantastic travel vlog about Serbia. And as for McDonald's. I may be mistaken. Also because of the fact that it may also differ greatly where you are in Serbia. But most Serbs don't like McDonald's. They usually prefer their own street food anyway. There were several places in Serbia where they had opened McDonald's. But that had very little enthusiasm. It was way too expensive for most anyway. But also many did not like the food as much as the traditional food.. Especially the traditional street food. In Sabac they even turned that McDonald's building into a bank.

Some of this street food mentioned in this video is regional, and some you can find everywhere but it is the best in certain regions. For example, index sandwich originated in Novi Sad and usually the best ones can be found there. Komplet lepinja or "lepinja sa sve" ("lepinja with everything") originated in Užice and the best ones are over there and on nearby Zlatibor mountain. The best barbecue is in Leskovac (you confirmed that AFAIK), best burek is usually in Niš, best pečenje around motorway between Kruševac and Čačak, etc. BTW, if you go back to Novi Sad definitely try "gomboce" (plum dumplings, but there are many other varieties, that is the "original" one) and if you go back to Subotica then try "juneći perkelt" (veal goulash served on pasta with cottage cheese and fried bacon, it's Hungarian traditional dish), I can give you the name of the restaurant where there is one of the best ones :-) And there's one more local food in the northern parts, i.e. Vojvodina, that "westerners" usually find strange, it's "rezanci s makom" (pasta with poppy seed). And if you are around Bački Petrovac, definitely try "kulen" (smoked pork sausage), it is made by Slovak national minority living in this region for almost 3 centuries, you can find it only there (there are similar ones elsewhere, but this one is special) ;-) And speaking of sausages, there's also "peglana kobasica" ("ironed sausage", when you see one, you will know immediately why it's called like that) in Pirot, original ones are made of "3J" (jagnjetina, jaretina, junetina = lamb, goat, veal).

Good show guys, only I have to correct you on burek... In Serbia as in Turkey, where burek is originally from, you have many types of it... Burek meat, burek cheese, burek spinach, burek with mushrooms ... And it could be in form of pita or rolled. Only Serbian secret ingredient is to use pork fat instead of cooking oil. Bosnians will claim that burek is with meat only... rest they call pita. Why, you have to ask them. They are a bit odd on the subject. Cheers!

Exactly, that applies only to Bosnia, in Serbia there are three traditional types: burek sa mesom, burek sa sirom i prazan burek but now there are other fillings as well. There are differences in burek, for example in my part of Serbia burek is considered to be the one that comes from Niš, and what is considered burek in Bosnia is called "pita savijača/uvijča". Of course, we have different types of pies, but they differ from burek in the way they are made, and burek is usually fattier. We also have: gibanica, pita sa jabukama, pita sa orasima, zeljanica, krompiruša, sirnica, pita sa sirom, pita sa bundevom / dulekom, pita sa pečurkama, pita sa kupusom ect. but they are not the same as burek ie. they are made and bent differently.
@Randomly1234
@Randomly1234 10 месяцев назад
@@dj_m1999 Everyone knows it comes from Turkey, that doesn't make it any less of a national food in Bosnia or Serbia. I actually ate burek in Turkey, it's similar but very different, we go much crazier on the grease and put more filling, and the traditional oval shape of our burek was in none of the bakeries there for some reason, they were all pita shaped. Anyway. As far as what the original comment was saying. It is true that Serbs make burek with everything (you can even buy a pizza burek in some places, I know, crime against humanity), while if you go to Sarajevo you'll find burek and pita to always be a separate thing. That's really all that was said, and it's true. Serbs don't care as much as Bosnians about this difference, although we are also aware of it.
@dj_m1999
@dj_m1999 10 месяцев назад
@@Randomly1234 of course it doesn't make it any less of a national food in Bosnia or Serbia, my point was that Bosnians foolishly assert their tradition and their way of making as gospel AS IF they invented burek and have the right to do so. I've never seen a Serb or a Croat, or a Slovene or whatever argue with Bosnians and tell them that burek isn't only with meat, it's always the other way round and Bosnians starting the unnecessary conflict over such a trivial topic.

The only reason komplet lepinja wasn't 9 stars is because you didn't eat it in Užice. The original name is Užička komplet lepinja(lepinja set from Užice), and there is a particular way you are meant to eat it.

The main difference between pita and burek is that burek is made with animal fat and pita is made with oil. Today you have bureks with cheese, mushrooms, spinach etc, but traditionally burek is made with meat. There are no differences between the doughs used for pitas. That is phyllo pastry and you can find it in supermarkets (I think in Canada in some places, too). It is possible to make it home, but today few people do it that way. Eating pita crumbs is totally ok. You should know that drinking yoghurt with basically anything from bakery is a must. Your host is not from Užice, obviously, cause she would show you the way to eat komplet lepinja. Užice with its surroundings is the place where you'll find the best komplet lepinja in the country. Yoghurt on top of it was quite heavy to watch. :D Great video, as usual, props!

Wrong, traditionally, borek is made with many ingredients, like meat, cheese, spinach, potatoes, not only meat. You cant say exactly where it originates, but its not Balkans for sure, its either Turkey, Iraq or India. They all have similar dishes and its hard to pinpoint the place of origin.

I think now that it would be fair from your side to put a warning before the video about what will happen in it. Especially for people who wrongly started watching this hungry with nothing similar to purchase nearby.
