Head Brewer Neil Conway shows us how our Incremental Mash Converter, the second in our technological trinity, is the ultimate in mash conversion. Through optimum enzyme activity it delivers precision of flavour for every Single Farm Origin.
Completing our mashing technological trinity is the mash filter system, a series of 54 in-line pneumatic presses that give us total terroir extraction.

Great video, quite a different approach than the more traditional distilleries (the Edradour videos on RU-vid are great). 6:45 you say you want 400L/tonne. With that fancy sparging machine I thought that’d be a given since you’re doing 100% malt (easy to convert). Do you kiln your malt darker than others and lose sugar or is your barley generally higher protein?

Thanks Brian. 400 las per tonne is not always achievable for a number of reasons. It's not always just down to mashing efficiency. The PSY (predicted spirit yield) of the malt may not always be above 400L/tonne depending on crop year, protein, malting performance etc. You may also encounter natural fermentation losses of 1 or 2%, distillation losses of 1%. So our target efficiency is 95% of the predicted spirit yield. Our process is also natural so no enzymes used. We don't kiln our malt darker than the standard and we will only choose Single Farm Origin batches with proteins lower than 10.5%. The next film(s) will hopefully answer a few more questions.
