According to an article on the "Probo medical" website, "Why Does an Ultrasound Probe Need Matching Layers?", matching layers with a size larger than 1/4 of the wavelength of the ultrasound attenuate the ultrasound more. I guess it has something to do with the amount of ultrasound that is absorbed by the matching layer depending on the wavelength/frequency of the ultrasound. Though it could definitely be something else.
