To be fair there are ethnic restaurants opening here in Canada putting weird random shit in poutine and other traditional Canadian dishes. Do I give a flying fck that someone put kimchi on poutine? As a home cook, I wonder how a professional celebrity chef can screw something this simple up this badly. Like, OK you can have your own spin on a dish, like roasting the tomatoes, making your own tomato paste, doing the marinade a bit different, use coconut milk for the marinade etc, but if you're making BUTTER chicken...how about actually making BUTTER chicken.

I feel like as these guys get successful and celebrated, they stop learning. They've started being told they're right all the time so why bother checking or gaining new information? They just do it how they think it's done, and "improve" things they think need improving, and then publish it as if they're an authority on it. There's an inability to admit not being perfect that prevents them from learning, and also results in stuff like Ramsey's shitty grilled cheese.

Everybody knows butter chicken. Jamie was never about being authentic and I don't see how this is such a big problem now after all these years. It's mindblowing. Preserve and honor the original recipes, but have fun with cooking aswell. Otherwise you are just holding yourself back.
