I think I figured out why soba! Jaime has been on this huge 'cooking healthy' thing for years, and when he went to the market (or sent his shoppers) he was probably looking for 'healthy noodles'. Then he saw that soba was brown, and using Western Logic ™, he decided that made it healthier for you. We do it with bread and eggs and almost everything else, so we know your game now, buddy!

My culture eats rice everyday, I switched to brown rice to be “healthier” when I developed kidney stones. But I had to switch back to white rice because even a moderate amount of oxalates brown rice, eaten everyday, turned out to be really bad for my kidney stones.

When you're making a brown broth or a dark broth you roast the bones first. Reason being when you are making your broth roasting it gives you the opportunity to have the least amount of scum on top. If you're making a white broth then you don't roast because you want that clear color. Edited to add: the roasting also reduces the amount of time that you have to boil it. It's already parcooked

I know, buddy. D'you know who loves spinach? I love spinach. Like, a lot. My old signature noodle soup I used to make had spinach in it. The difference is sautéed mine down with sesame oil, pepper and a tonne of garlic (only no salt because, between the Chicken Bovril I used as cheat stock and massive amount of fish sauce, any more salt would have rendered it totally inedible to most people) so it was soft and flavoursome before it went anywhere near my _damn_ soup. I didn't just squeeze it into a big frig-off ball and call it good. Thomas Jefferson once said, "the price of freedom is eternal vigilance," and it's as true today as it was when he said it. In this case the freedom in question is freedom of expression while the vigilance is having to watch out for recipes pulled out of the asses of complete lunatics.

5:53 Depends a lot on the eggs. 6-7 minutes is going to give me a hard boiled chicken egg with the eggs I normally have available. 6:05 He has a point. Traditionally brewed Japanese soy sauce is not as salty as, say, Kikkoman soy sauce. The problem is that low salt soy sauce isn't just low salt, it's also sweet, which completely ruins it.

You can get pork belly with bones, it's the side bottom of the ribs and it makes the meat taste even better with the bone juices in there... BUT HE DIDN'T USE PORK BELLY WITH THE BONES! I have no clue why he said that unless he thought it was the bone-in belly cut but whoever got his ingredients for him fucked up and got the boneless cut instead.

Im half Chinese, half Korean. Needless to say, I cried. Haiya, that chashu is about as white as Jamie himself. And he added kimchi into supposedly Japanese ramen?? What the hell la, eggs are white, chashu even whiter, you can tell that tastes bland as frick just by looking at it, congrats, Jamie, you’ve successfully offended an entire race of people by whitewashing the dish so badly you might as well have added bleach.
