I know that the finer the grind the stronger the coffee!!! I LOVE PERCOLATED COFFEE !!! It does taste different, when you have it for the first time, you will taste the difference!! has to be medium to course ground coffee grinds

From beginning college organic chemistry, the dissolution of caffeine (bitter or acidic component in coffee or tea) is a function of time. From the moment your coffee gets wet with hot water, 6 minutes is pretty safe to avoid most all bitterness. If you like stronger, more bitter coffee go on up in timing to 8-9 minutes. If you want a really strong coffee, go on up. But timing is important. The Strength of your coffee should be adjusted by the proportion of coffee to water instead of timing. Or use a different depth of roast (I combine light roast; where the fruity notes are; with medium roast). But timing is the key to controlling bitterness. Also your pot should not be perking too fast or the water will pool & stay in contact too long, sitting on top of the basket. You want a steady amount dripping on through. A nice steady perk on medium is best. For more flavor (and less bitterness) roast your own coffee. You can keep them for 3-5 days. The flavor profile changes over these days but all of them are superior to grocery or pre-packaged coffee imo. I use hot air popper with a foil thing to prevent the beans from hopping out. Or a cast iron skillet which requires constant stirring. There are expensive gizmos for home roasting but all of them are overpriced imo

My grandma percolated her coffee the entire time she was cooking breakfast like 15 or 20 minutes. It was delicious and made your hair stand on end!
