Hi Nancy thats exactly the same question I had in my mind,my case is similar with yours,I have an appointment in April but the dates in the invitation letter have expired because there was no available slot for interview in the given time. Please let me know when you get an answer to this .
Obviously you now want to go to the US for another reason hence why you're still going for the interview even though the event has passed. When they ask you, give this other reason for which you're pursuing a Visa this time round.

If your going with ur child of 2yrs old and you are required to go on the trip with ur child they will ask u to come with a consent letter from ur spouse. What is expected to be in the letter. Should ur hubby state how long u are permitted to spend in that vacation

As long as you can convince the visa officer handling your case that you have enough funds to cater for your travel expenses to the US as well as for your upkeep and vacation for the duration of your stay. You also need to be able to convince the visa officer that since your parents are immigrating to the USA, you have other reasons and motivation to want to come back to your home country after helping them to settle in.
