Card sorting helps with creating "smooth interactions" I like the concept of smooth interactions rather than "seamless interactions". You are never going to be able to achieve a "seamless" interaction because it's unattainable, but if your users feel like your interactions are "smooth" you can count that as a win.

Hi! I was just wondering are you targeting specific users to do a card sorting or all the gender/age groups are applicable?

You would likely want to find people that would be the target demographic. You could also diversify your participants by target users and general users to see if there is any divide in their categorization if that is applicable
