Here's a traditional recipe for making Olot Samsa, a popular Uzbek pastry filled with meat and onions:
Ingredients:
For the dough:
• 4 cups all-purpose flour
• 1 teaspoon salt
• 1 cup water
• 1/4 cup vegetable oil (for layering)
For the filling:
• 500 grams (1.1 lbs) lamb or beef, finely chopped
• 2 large onions, finely chopped
• Salt to taste
• Black pepper to taste
• 1 teaspoon cumin seeds
• 1/2 teaspoon coriander seeds
For the topping:
• 1 egg yolk, beaten (for brushing)
• Sesame seeds or nigella seeds (optional)
Instructions:
1. Prepare the Dough:
1. In a large bowl, mix the flour and salt.
2. Gradually add water and knead the mixture into a smooth and elastic dough.
3. Cover the dough with a damp cloth and let it rest for about 30 minutes.
2. Prepare the Filling:
1. In a separate bowl, combine the finely chopped meat, onions, salt, pepper, cumin seeds, and coriander seeds. Mix well.
3. Roll and Layer the Dough:
1. Divide the dough into 4 equal parts.
2. Roll out one piece of dough into a thin, rectangular sheet.
3. Brush a thin layer of vegetable oil over the entire surface.
4. Roll the sheet into a tight cylinder.
5. Repeat with the remaining dough pieces.
6. Let the rolled cylinders rest for 15 minutes.
4. Shape the Samsa:
1. Cut each cylinder into 2-inch pieces.
2. Flatten each piece with your hand and roll it out into a circle about 1/4 inch thick.
3. Place a spoonful of filling in the center of each circle.
4. Fold the edges over the filling to form a triangular or square shape, pinching the edges to seal tightly.
5. Bake the Samsa:
1. Preheat the oven to 200°C (390°F).
2. Place the samsa on a baking sheet lined with parchment paper.
3. Brush the tops with beaten egg yolk.
4. Sprinkle with sesame seeds or nigella seeds if desired.
5. Bake for 25-30 minutes, or until golden brown and crispy.
Serving:
Serve the Olot Samsa hot, fresh out of the oven, as a delicious appetizer or snack. Enjoy the rich, savory flavors of this traditional Uzbek dish!
