The karve does NOT outrun a sea serpent. It is fast enough to get you to land before destruction of the ship as long as you can use the wind but even at full sails the sea serpent can easily catch you on the karve. The trick I found was that the serpent wants to come at you from straight from the back to bite the karve. So as soon as I saw it lining up for a bite I would change direction to throw off the pathing. A lot of times it would drop back and reset position. It never had a problem catching back up to bite the ship.
