It's got nothing to do with the temperature of the heat source. It's the internal temp of the food. Like chicken, internal temperature should be 75 degrees Celsius. It doesn't matter if you use a low, medium, or high heat as long as the food comes to temperature that kills any bacteria. And also where the food is from. Like eggs... Japan and Australia have regulations that allow the people to eat pretty much a raw egg as they don't contain salmonella, but places like India, the eggs need to be cooked to around 65 degrees to be eatable as they don't have a standard on the quality.
Golden Point - All food being cooked presently on high flame using a high amount of gas would have cooked a lot faster and would have tasted a lot better and used far less gas ie medium flame if copper dishes ie non stick variety had been used instead of stainless steel, aluminium or tin dishes ( azp )
