Easy steps to make kalyana veetu style vathal Kuzhambu is explained in this video. sundakkai vatha kulambu is a very popular south Indian dish which goes well with kal dosai , curd rice and rice. To make the perfect vatha kulambu with smooth base with no-bitterness is a challenge, and this video will teach you how to make it.
ingredients
Vathkulambu masala
Bengal gram dal 1 tbsp
jeera 1 tsp
pepper 1/2 tsp
garlic 5 cloves
coriander seeds 2 tbsp
red chilli long 4 nos
coconut 1/2 grated
curry leaves 1 string
turmeric powder 2 pinches
Onion 1 no. (Big)
tomato 1 no.
oil for saute
Hing (Asafoetida) a pinch
Vatha kulambu Gravy
Dry sundakkai Vathal 15 gms (pre socked in water)
sambar onion 50 gms
tomato paste 2 nos
coriander powder 1 1/2 tsp
Kashmir chilli powder 1 tsp
Tamarind small lemon size
salt to taste
mustard and urad dal 1/2 tsp
fenugreek 1/4 tsp
round chilli 4 nos
gingerly oil for sautee , cook and to finish ( approx 125 ml)
curry leaves 1 string
turmeric powder 1/4 tsp
asafoetida a pinch

Today I tried this with little variation ie replacing sundakkai vathal with madathakkali vathal. Also I added few dried curry leaves while grinding from my side. Bowl is clean bowled in minutes. Thank you for your extra tips

Raw sundaikkai will be bitter but you can rinse it with tamerind pulp or butter milk before cooking it.

We made the vatha kozhumbu today. It was... EXCELLENT! So much so, I skipped the rasam course and had two rounds of kozhumbu with nalla ennai. Finally, I thotified the kozhumbu with curd. 🙂 My mother who comes from a very traditional Madurai home also loved the kozhumbu. The next time, I plan to make the kozhumbu a day in advance and have it the next day!

Why you are adding some ingredients twice once in wet and another one in second stage It would have been better if you articulate why you are doing that For instance dhania seeds it was added in wet again powder in second stage similarly tomato once in raw form in wet stage and purée in second
