Ingredients
Brinjal-1 big
Tomato-1
Coconut oil-
Onion-3
Small onion-10
salt-
Coconut milk-1/4cup(opt)
for marination
Kashmiri chilli powder-1tsp
Chilli powder-1/4tsp
Turmeric powder-1/4tsp
salt
Coconut oil-1/2tsp
Water
for masala paste
ginger-small
garlic-3
green chilli-1
curryleaves-4
fennel seeds-1pinch
pepper powder-1/2tsp
kashmiri chilli powder-1tsp
chilli powder-1/4tsp
Turmeric powder-1/4tsp
Water-
Method
Wash and cut brinjal ..cut into thick pieces and marinate ..
Keep aside for 20 minutes .
Then make masala paste ..
In a kadai heat oil and add onion and salt saute till light brown colour ..
Then add ground masala paste and saute till raw smell goes .
Now add tomato and cook well ..
Add thick coconut milk into it and mix well.
check the taste and keep aside ..
Fry brinjal pieces ..
In a banana leaf or parchment paper spread one layer of masala,then place the fried brinjal and again spread some masala ..
Wrap the banana leaf and roast in medium flame in both sides till the leaf get slightly burn..
So the tasty brinjal pollichathu is ready to serve ..
