Here is a Portuguese-style veal tendon recipe, inspired by traditional Portuguese flavors. This tasty dish combines the tenderness of veal with typical ingredients such as tomatoes, peppers, garlic and chorizo.
#ingredients
- 1 kg of veal tendons
- 2 onions
- 3 cloves of garlic
- 2 red peppers
- 2 green peppers
- 400 g crushed tomatoes (canned or fresh)
- 150 g of chorizo
- 200 ml of dry white wine
- 500 ml of chicken stock
- 2 tablespoons of olive oil
- 1 tablespoon of paprika
- 2 bay leaves
- 1 bouquet garni (thyme, bay leaf, parsley)
- Salt and pepper
- Chopped fresh parsley for garnish
#instructions
1. *Preparation of ingredients:*
- Peel and slice the onions.
- Peel and chop the garlic cloves.
- Wash, seed and cut the peppers into strips.
- Cut the chorizo into slices.
2. *Sear the meat:*
- In a large casserole dish, heat the olive oil over medium heat.
- Add the veal tendons and brown them on all sides. Season with salt, pepper and paprika.
- Remove the tendons from the casserole and reserve them.
3. *Cooking vegetables:*
- In the same casserole dish, add the onions and fry them until they are translucent.
- Add the garlic, peppers and chorizo. Cook for about 5 minutes.
4. *Deglaze and simmer:*
- Add the crushed tomatoes and mix well.
- Return the veal tendons to the casserole dish.
- Add the white wine and let reduce by half.
- Add the chicken stock, bay leaves and bouquet garni.
- Bring to the boil, then reduce the heat and simmer covered for around 1.5 to 2 hours, until the meat is very tender.
5. *Finalize the dish:*
- Remove the bouquet garni and bay leaves before serving.
- Sprinkle with chopped fresh parsley for garnish.
6. *Serve:*
- Serve hot, accompanied by rice, potatoes or fresh bread.
additional tips
- For a spicy touch, you can add a little red pepper or Espelette pepper.
- The chorizo can be replaced with another spicy sausage if desired.
