Thai Red Curry ! This is my most favourite curry & it is literally comfort in a bowl.

Ingredients-
For the Thai Red Curry paste-
3 stalks of Lemon Grass
Zest of Lime
6 to 8 Shallots or 1/2 Medium Onion
1 inch Galangal or Ginger
4 to 5 cloves of Garlic
10 to 12 Kashmiri Red Chillies *
(Soaked in warm water for about 2 hours and seeds removed)
2 tbsp Chopped coriander Stem
2 to 3 tbsp Oil
Salt
1/2 tsp cumin powder
1/2 tsp coriander seed powder
1 thai chilli
This will give you enough thai curry for 4 to 5 batches (Using 300 ml coconut milk each)
For Thai Curry-
You can use any vegetables of your choice. Tofu is great too.
300 ml coconut milk (You can use @daburhommadeofficial or Kara / Cocomi )
Some Palm Sugar
Kaffir Lime leaves
Few Basil Leaves
I have served it with rice noodles but you can also serve it with steamed rice.
JAIN VERSION - Skip onion, garlic. They cannot be replaced with anything. It will still taste amazing 😋
FOR CHILLIES, you can modify the quantity in case using spicy ones. The Kashmiri red chilli I used is very low ok spiciness so works perfectly.
Method-
1. For red thai curry paste in a grinder take some Kashmiri Red Chili(soaked for nearly two hours), garlic, ginger, coriander stem, lime peel, lemon grass, onion, some cumin powder, coriander seed powder, some oil, salt and now grind it up
2. Firstly, to cook the Thai curry paste, take a pan, add oil, 3 tbsp curry paste and cook this really well.
3. Next add roughly cut vegetables like broccoli, carrot, bell peppers and some celery.
4. Now add 250 to 300 ml of coconut milk.
5. Now add lemon leaf, palm sugar/ jaggery, a little bit of salt, some black pepper mix it well and let the curry simmer for five to seven minutes on low flame
6. Towards the end add basil leaves and simmer it for three to four minutes and Thai curry is ready. Serve it with jasmine rice or rice noodles.
🌟Vishesh Tippani-
While grinding, scrape down the sides and be patient. Grind it fine so that the fibre doesn’t come in the curry.
Kaffir Lime leave or just regular lemon leaves with Palm sugar does make a lot of difference.
