You severely underestimate what a good musician can do. Composing music gets easier the more you do it. It's something you can do in your head alone without playing an instrument. Playing one helps but composing a hard piece is easier than playing one well.

That is amazing learning Uke and Guitar. If I could even be half that good in the future, I will be impressed. I like the unbeatable version as it has a rhythmic flamenco flowing sound, but I think my favorite is the Gipsy.

Dude, the original version was right on point. Simply amazing, if you had a mariachi band backing you with horns? It would take an already amazing cover to the next level.
