If anyone is like me and rarely has bread flour: Bread flour has a higher protein content than ap flour but to boost protein in ap flour I always add about 4g of vital wheat gluten to every 4 cups of ap to make my own bread flour. It helps keep the structure of the dough fluffier by keeping the protein content higher.
I made your all-purpose dough the other night for the first time and used it for garlic-herb monkey (pull-apart) bread. It was awesome! I'm really looking forward to making this bread! Just saw this video and are amazed that people not tie up their hair while baking, it’s so not hygienic, than touch the hair and without washing the hands, touch the dough, disgusting, can’t watch this
