How to make VEGAN MARSHMALLOW SEALS! I LOVE eating these. I also have a non vegan version, but I love this version. I'd say these vegan marshmallows are a little different to standard gelatin ones just because of the way the agar sets - but just as nice and fluffy, just in a different way. And just to let you know before you make these - home made marshmallows are different to shop bought ones, but in a delicious way! And you need to leave them to dry out for about 2 days to get them just perfect. Eat them too soon and they'll be too wet inside! (but still tasty).
Also agar agar powder strength can actually vary from brand to brand... mine is pretty high strength. If you find you need a little more though, tweak to add more. Just don't be temped to add too much cause it makes the marshmallow texture weird - more is not better! And getting that sugar syrup to the exact temperature is KEY (118C/244F), plus making sure you whip for 10-12 minutes after adding the agar agar. Also these do keep for a few days but best eaten quickly after they've dried to the optimum level - otherwise they just continue drying. And if you don't want to pipe seals, you can just spread this into a tin (covered with the cornflour/icing mixture) - then slice the next day (use a warmed sharp knife to help it not stick), coat all the edges with more cornflour/icing, and then leave to dry again til the next day.

As usual, here's the ingredients and key info for you below: (recipe from 'Christmas with Kim-Joy but sharing with you this one cause i'm nice-ish. Also including cup conversions, though I would really recommend using grams as accuracy in this is key and cup conversions can be quite different each time!)
To sieve over/underneath marshmallows:
60g icing sugar (1/3 cup)
60g cornflour (2/3 cup)
a bit of oil to grease
150ml water (2/3 cup)
1 1/2tsp agar agar powder
150g caster or granulated sugar (3/4 cup)
75g liquid glucose/glucose syrup (1/3 cup)
pinch of salt
75ml aquafaba (1/3 cup)
1/8tsp cream of tartar
3/4tsp xantham gum
1tsp vanilla bean paste (or you can use any other flavouring as long as you aren't adding much liquid to the mixture. But make sure you do flavour otherwise these just taste like pure sugar. I used just a tiny drop of essence of pannetone recently and it was AMAZING)
Do make a chocolate igloo to house them all in too 😊
