Thank you I enjoyed this recipe! I loved the flavor of the curry leaves with the lime leaves so I used both. I too love a spicy curry! I added carrots and let my curry cook down a bit before adding the coconut milk. This helped the curry flavor to get into the veggies really nicely. I loved being able to let it simmer away all on 1 pot and it was fantastic the next day for lunch!

Thanks for this recipe. It reminded me of when I was really little and my uncle took me in the kitchen and allowed me to help him to make pumpkin stew. It was so much fun. He didn’t use coconut milk or lemon grass though. I’ll be trying your way in a few minutes. I can’t wait to taste your recipe.

And be patient if the bait on the hook is good enough you wont have to worry about catching them be confident eventually the fish will find YOU. Youll need a bigger basket Lol Keep doing your thing. I made it today, though I had made some variations it turned out to be good. Made it in bulk, so its going to last for 3 meals atleast I think XD TIP: add some fresh soft raddishes and double the water content to give it a stew like consistency.

D L I’m sure you’re going to love this one! Pumpkin is important, especially if you are eating plant based because of the vitamin A we need. Combine it with some healthy fats like coconut And your body will absorb the nutrients more efficiently! Let me know if you try this one. ❤️✌️
GORGEOUS ~ absolutely scrumptious, everyone thoroughly enjoyed the meal made it with homemade Palak Paneer & garlic naan. It is so rich & creamy, flavourful & tasty comments were that it tasted as good as you would get at a 5 Star Indian restaurant, I would have to agree,. Won't be the last time we have this dish as we grow our own Jared pumpkins (a harder dryer pumpkin than the ones in the USA for Hallowe'en) it was perfect, more like a Butternut I would say. Guess I'm going to be checking out all your recipes based on how good this one is. Again thank you Irene, you're as good as it gets.

Hi Annie! Thanks for watching. :) I don't think coconut flakes will give the same end result and texture. Could end up lumpy but also coconut flakes or not the same this as coconut milk powder. . Coconut flakes or shredded coconut is made up of dried, finely ground coconut meat. On the other hand, coconut milk powder is extracted from fresh coconut milk suitable for thickening curries, soups and so on. While they might look the same, there is a lot of difference between coconut milk powder and coconut flakes. I hope that helps! :)
I’m curious if roti is made differently across cultures. Some restaurants have the flaky roti and others have the chewy rotis. I like both, but I’m gluten free now so I’m making a sweet potato gluten free version. Looking forward to making this pumpkin curry today.
They are made differently in each country/region! In Sri Lanka, roti is made with flour and shredded coconut, whereas in India it depends on whether they do just flour and butter or other special ingredients.

Yes, pls don’t leave out the coconut milk powder! Wow what a combination! Both very exotic cultures. The roti is easy to make but there is a certain technique that gives it that flaky texture. Hey, you’re most welcome!!! Maybe you can replace it with soy cream, or oat cream? Choose one that is a bit sweet. You could add one of those creams and a bit of sweetener. It’s a tough one but either way you will enjoy! You could just leave it out but this is that last step that makes the dish heavenly. ❤️❤️❤️🙏

Hi you can use dried coconut, and grind it then add some water, or almond milk or boil skinned raw peanuts, or raw cashew nuts in water, drain and grind with a little of the water to make a creamy liquid/paste, Love from Scotland x

Just a suggestion if you dont hv the coconut milk powder just add some thick coconut milk at the end and leave it on the fire for a bit till the curry thickens...thats what s done in Sri lanka for curries ...Sri lankans tend to cook with the lighter milk at the beginning then at the end they add the thick milk and leave it on the fire for a bit till the curry thickens...hope that helps 😊
