If you wanted to add fruit flavor such as lemon zest/juice or strawberries (either jam or freeze dried powder) at what stage in the recipe should this ingredient be combined? Also would monkfruit powder sweetener (lakanto or swerve) would this substitution work if trying to make this keto friendly?
You would add those additions after the frosting is complete 😁 I am not sure about the monkfruit powder as this frosting really requires the hot syrup to make it work. I would say possibly try it in an american buttercream or cream cheese frosting possibly. 😁
Hey, when I make this buttercream, I find that the mixture often splits when I pipe it or add colour. There are like globules of bean juice and I am not sure what I am doing wrong.
its a pretty fragile emulsion between the aquafaba and "butter". if it gets too warm it will split. you can try sticking it in the refrigerator for 10 minutes and then whipping it again to see if it comes back together. i recommend gel or powdered food colors to keep it from splitting ♡ hope this helps!

Can I boil some chickpeas and use the water instead of the canned one? Also, is shortening necessary, or can I just use vegan butter instead? I’ve never tried vegan butter, but I want to master vegan baking!!
I have not tried that myself but I have heard of people making the aquafaba themselves 🙂 You can, but it makes the frosting super super soft. I use the the shortening to make it a little bit more of a workable consistency. 😁

@@sophieyork8929 Shortening is Hydrogenated Vegetable Oil. one of the most common brands is Crisco. there are some much nicer shortenings as well though! 😊
as I've explained in some of my videos, there are some healthier shortenings that break down better in the body. There is conflicting research on shortening being bad for your heart. I prefer organic Palm Oil shortening as it breaks down well 😊
