Manjula aunty's recipes are all very reliable and simple and easy which is why hers is my go to website for cooking. I cooked this today and it looks and tastes great. I would only change one thing and that is slice and steam the carrots ahead of time as they take forever to cook. This means the cauliflower will end up being overcooked.
Making this today with potato, cauliflower, peas, peppers, carrots, onion, garlic, fresh chillies and sultanas. For spices I used: cumin seed, fennel seed, white mustard seed, brown mustard seed. Spice powder mix I used: Turmeric, coriander, asafatida, garam masala. I pretty much adhered to the way Manjula cooked her dish and honestly it was delicious!! We are all vegetarian in my house and my sons mates come in by the dozen on curry night...

How soft or hard should the dough be/ And wat should be the thickness of the paratha? I like the thick ones that is typically made in delhi/ north India. Thanks.
On May 24, 2022, my husband and I went to an Indian Restaurant for their lunch buffet. One of the dishes was a vegetable dish. As I was eating it, I was trying to identify the vegetables in it. Now I see that you posted a recipe for this dish on May 22, 2012, exactly 10 years and 2 days before! Now, with the help of your recipe, I will make this dish with confidence.

Wow that looks great! I actually made vegetable curry today but I didn't follow a recipe. I just happen to think of it on my own. It came out amazing considering it was my first time. Great video :)
Thanks for the simple recipe! Just have a question, why no onions? I usually see veg curries with onion (some are even have quite a lot). Will sauteing onions with the cumin seeds before the tomato puree be ok?
