I get this comments was from a while ago and you might have already made her this but if you make it again leave out the parmesan as it's non vegetarian. (It's made using remnant which comes from the stomach lining of calf's)

I like the veggie cooked like yours and then finely minced with the ricotta. Instead of big chucks of veggies in your lasagna. I can't wait to try this recipe. This is the best vegetable lasagna on. I went all out and made my own marinara from your other recipe video and went with San Marzano tomatoes. I totally skipped the spinach cuz i forgot to get it but doubled on the zucchini and my goodness it was delicious!!! Oh also i did add a tablespoon of sugar to the marinara to cut the acidity of the tomatoes . Not making any other lasagna recipes ever!! Thank you for sharing with us!

This looks so good. I am going to try it. I always use the regular lasagna noodles but I never boil them. They cook up just fine as the lasagna cooks. I have never tried the other noodles but due to the fact that I am now down140lbs thanks to the medical marvels of weight loss surgery I am am making better choices and will look at different types of pasta noodles plus the smaller ones that are no boil are smaller which will be good to make smaller pans of the stuff. Lasagna is my favorite food of all time and when I used to make it I made a huge pan of it. I still plan on making it but just in smaller pans and more healthy ingredients. Thanks for posting this video. This looks really good.

Very good Lasagna! Maybe it is because i am french (canadian) but I think it miss herbs. I add a bunch of fresh parsley in the blender with the Ricotta and oregano in the tomato sauce. Normally I would have add basilic but I did not have fresh one.
Thank you, coit. I make lasagna frequently; but this tip, to blend ricotta cheese with vegetables, is useful, and innovative, and must be easy to work with. I am sure the lasagna will taste better.

Oregano NEVER goes in lasagna!! Or red sauce in general unless it’s pizza!! You would be surprised how much flavor the parm brings layered throughout. If you’re using canned/jarred sauce that already has garlic, that would probably more than do it. Italian flavors are very light and there’s no meat that will hold up against much more. Maybe a little garlic powder in the ricotta but I wouldn’t go beyond that. Traditionally we just mix the ricotta with chopped spinach and pepper, all the flavor is meant to come from the sauce!! Only see heavy seasoning when americans make it with flavorless jarred sauce and ground meat Came for a fresh idea, and this looks GREAT!! I’d say give it a try, I bet you’d agree.
NO MEAT!. This is not fit for Human consumption. Red meat has multiple essential nutrients that you NEVER will find in plant garbage. There is absolutely nothing healthy about this, essentially spinach which is full of oxalates and iron that cannot be absorbed by humans.

Will definitely try this but with some plant-based cheeses--i have a family history of breast cancer so want to avoid all the estrogen in dairy, especially cheese.
