As a long time vegetarian who is not vegan and who likes to include "meaty" things in my diet, I appreciated this. Could this be baked in the oven if I don't have a pressure cooker?
I have not tested the oven, I think it might be better to try to steam it in a steamer basket over boiling water, I think that's how I made it before trying the pressure cooker. It looks like pressure cookers cook 30% faster than conventional cooking, so it might take 36 minutes instead to steam. With the oven, I'd be afraid of drying things out, even with the wrapping. It's a moist dish, which is why it ends up being so good! We love this so much better than the normal "Tofurkey" roast thing that is packed with so much sodium!
