Vengaya vadam is dried fritters which can be fried and goes well with sambar rice and can also be had as a snack . No moulds are needed for this vengaya vadam and can made and stored for months .
Ingredients for vengaya vadam
To be made into a powder . Can be stored for few months
1 kg raw rice ( wash and dry )
200 gm sago ( javvarisi )
1. 450 gms or 3 cups of the above powder
2. 350 gms small sambar onions peed and chopped finely
3. 4 to 5 green chillies
4. 1 lemon
5. salt to taste
6. 5 cups water to make a paste of the powder
4 cups water to boil.
( for 1 cup of the powder 3 cups of water )
Make a paste of the vadam powder with 5 cups water.
Grind chillies and half quantity salt to a paste
Boil 3 cups water in a heavy bottomed vessel .
Add chopped onions , salt and one more cup of water with chilli paste
when water begins to boil add the vadam powder paste and the remaining salt.
cook on low to medium flame till it cools to a thick flowing consistency
Switch off . Allow to cool and add juice of one lemon and mix well.
pinch small fritter size pieces and sundry on a cloth or plastic sheet for a few days .
once dried well vengaya vadam can be stored for a few months.
Fry them in hot oil and serve with sambar or rasam rice or simply enjoy them as a crunchy snack.
