I add little bit of jaggery and use rock salt . I put the salt ( கல் உப்பு ) in the hot kadai after switching it off. While roasting I sprinkle little salt so that there is no pungent smell. ( நெடி)

True but some recipes have unnecessary procedure. Watch his curd rice. So cumbersome. Simple curd rice with simple tadka with small mangoes pieces(of course during season) tastes yummy.
